@mrbee: I love this girl's recipes. This is her refrigerator pickles recipe that I'm planning to try out soon

Huh, I've apparently used this method when I made preserved lemons, just using salt and lemon juice.

I have never tried cucumbers, might have to see about planting some pickling cucumbers this year.

@mrbee: I can't remember for sure...it's been a couple years since we tried it. I think it was close to a week. We were following a recipe. Lid was on and in a cool/dark place. But they molded and got slimy instead of pickling. So we gave up on doin it that way and just use the hot pack canning method.

@Treytonsmom2011: just out of curiosity, how long did you leave the pickle jar out before putting it in the fridge? And did you have the lid on or off during that time?

We never had any luck using the lacto-fermentation method for pickles...they always ended up molding and getting disgusting instead of pickling like they were supposed to. Hopefully you have better luck since you make so much kimchi. We can a ton of cucumbers from our garden every year....made over 20 quarts of pickles last year but always with the vinegar based brine.

Oh interesting. I'm only familiar with the kind you can in boiling water, which requires vinegar to preserve them

How do you make these non vinegar pickles??

@blackbird: @mrbee: A bit of trivia.... the word pickle comes from a Dutch word that means brine.

Here in the UK, pickle refers to the vegetables preserved in vinegar/brine but it also refers to chutney. I've made chutney (but never the other sort of pickle!)

I made a batch that was suppose to be claussen like. (Not boiled).

I don't think it tasted quite like claussen but DH really liked them.

I might try it, but only because someone here posted about pickling using the leftover pickle juice from a bought jar.
I guess it doesn't work well if you don't like store bought pickles though!

Going to make pickles with the kids tomorrow. I've made a lot of kimchi over the years, and the process is actually really similar. Hopefully the kids will enjoy the finished result! They've been loving pickles lately, but I don't like the store-bought ones with vinegar in the brine.

Have you ever made your own pickles? Let us know if you have any tips... thanks!
