I think if I was in that situation it would be about making 1 meal but freezing smaller portions. Even spaghetti freezes really well and for those nights you just need a single serving for DS, you can pull it out and reheat. Same goes for taco meat. If you're making the mess, go ahead and throw in an extra pound to divide up and freeze.

Lasagna was my go to for awhile. I could add (hide) tons of veggies in it, it was quick if I used the non-boil noodles, and the kids would eat it without complaint. I could make it ahead of time too.

Is there one day you can make some food ahead of time?? I've been trying to make food on Sunday and portioning out lots of containers for the week to heat up. Los faves:

Shepherds pie (leftovers for me too!)

Chicken pot pie filling (made quick with rotisserie chicken) and then I make mashed potatoes and put those in with chicken and by themselves

Mac and cheese (obvi) with peas

Basically anything he will eat that I can put into little containers.

Dr Pragers frozen veggie burgers, little fishies, broccoli bites, etc are also a big hit, easy, and small portions so you don't waste

It is okay to eat a bigger meal at lunch and eat something lighter at dinner, like a soup, salad, small sandwich, smoothie, etc.

We've been have this problem too but my second isn't here yet, I'm 38 weeks pregnant. For me by the time DS mutilates dinner I just can't eat it with morning sickness. He's 19 months too and feeding him is miserable. The only things I can bank on are smoothies. I did do scrambled eggs last night though and he ate those! Good luck!

I know you probably want to have a nice family dinner with everyone eating the same food but it might work better to make a separate toddler friendly meal for DS. I've started doing this fir my 21 month old and it's seriously made meal time so much better. Sure, it's a bit repetitive with mostly sausage, fish fingers and yoghurt but it works. I either eat at the same time or after DS is asleep.

How about quesadillas & beans, frozen tortelini, fish sticks, or a baked pasta dish (that Mrs. Confetti posted today)? Will DS eat grilled cheese and tomato soup? All about easy when you are home alone!

It's just dd (2 months), DS (19 months) and I for dinner all week. I've been cooking dinners, but wasting an insane amount of food due to DS's pickiness and I usually can't eat when he eats because I'm nursing dd so I can do bath and bed for him after dinner. I really need help with meal ideas for us and our situation. I know it'll be harder when I go back to work.

I made tacos tonight and DS ended up eating one (barely) and I wasn't in the mood by the time I got back to the messy kitchen.
