<description>&#60;p&#62;- lettuce wraps&#60;br /&#62;
- tacos (chicken, beef, pork, steak) you can make a salad instead to skip the carbs of the shell.&#60;br /&#62;
- stuffed peppers (lean beef/turkey, brown rice, tomatoes, peppers, onion, cheese on top)&#60;br /&#62;
- marinated chicken (Italian dressing) and bake or grill with some veggies&#60;br /&#62;
- pulled chicken/pork in crockpot (we do this once a week) and then you can do whatever you want with it: sandwiches, top on salads, throw in a tortilla for a wrap&#60;br /&#62;
- zucchini pasta topped with veggies and EVOO&#60;br /&#62;
- zucchini pizza boats (kid favorite at my house) use a zucchini as crust insead of pizza crust and top like normal.&#60;br /&#62;
- WW pasta tossed with EVOO, red pepper flakes, garlic, chicken, tomatoes, spinach, onion.&#60;br /&#62;
- rotisserie chicken (crockpot or store bought) and roasted veggies &#60;/p&#62;
&#60;p&#62;My best advice is to cut the veggies up the night before it saves a ton of time and then just toss in EVOO and spices and roast for 20 minutes.  The crockpot is my best friend for quick dinners. I use it at least 2-3 times a week so I can enjoy my nights with my girls and DH.

&#60;p&#62;Dice potatoes, put in foil with olive oil, salt and pepper, bbq. Same with sweet potatoes. &#60;/p&#62;
&#60;p&#62;Slice zucchini, sprinkle on seasoning salt, add shredded cheddar cheese, bbq. Same with slices of tomato and mozzarella! (Works best on a cookie sheet on the bbq...)&#60;/p&#62;
&#60;p&#62;Skewers! Pepper, zucchini, mushroom, onion, pineapple. Some time consuming prep work chopping veggies.  Bbq!&#60;/p&#62;
&#60;p&#62;Broccoli salad - broccoli + mayo + vinegar + mozzarella cheese + dried cranberries. I usually make enough for two days. &#60;/p&#62;
&#60;p&#62;Sometimes we also have &#34;appetizers&#34; to hold us until dinner is ready. We favour peppers and hummus, and bread (ciabatta or focaccia) and olive oil and balsamic vinegar.

<description>&#60;p&#62;Stuffed pepper skillet.  Sauté onion and ground meat, drain fat, and add a jar of spaghetti sauce and chopped bell pepper and cooked rice (great use of leftover brown rice) and whatever herbs, spices, salt and pepper you like until rice is warmed through and the bell pepper is cooked.  Much faster than stuffed peppers and one skillet.

<description>&#60;p&#62;Oh man, there are tons of things you can make in 30 minutes, especially if you do some of the prep work ahead of time.&#60;/p&#62;
&#60;p&#62;Protein + salad (be creative: spinach, arugula, baby greens, avocado, nuts, fruit, goat cheese, etc.)&#60;/p&#62;
&#60;p&#62;Marinade chicken in a ziplock overnight (can freeze in the marinade and let thaw in the fridge while you're at work): bbq, teriyaki, etc. make kabobs with marinated chicken, sweet peppers and onions. &#60;/p&#62;
&#60;p&#62;Sides of grilled veggies, caprese salad.&#60;/p&#62;
&#60;p&#62;Quinoa takes less than 15 minutes to cook - lemon or pesto quinoa is great as a side or make big batches of quinoa salads with beans, veggies, etc (southwestern and greek are two of our favorites).&#60;/p&#62;
&#60;p&#62;Make a batch of pesto pasta ahead of time and have that cold with some grilled meat or fish&#60;/p&#62;
&#60;p&#62;Fish tacos, carne asada tacos can be pulled together in less than 30 minutes. Crockpot of pulled chicken or pork: make sandwiches one night and carnitas-like tacos the next.

<description>&#60;p&#62;This isn't anything creative but we make a bunch of chicken early in the week and make big salads with chicken a few nights- you can add variety, Italian salad, Mexican salad, etc. It takes me over an hour to leave work, pick up the baby and drive home so I'm happy for something simple and tasty.
