Rice/veggies (I make a big batch on Sunday and parcel it out), homemade soups, apples with peanut butter, and almonds. I also try to drink tons of water.

I tend to do a bunch of snacky stuff rather than a big meal at lunch, because eating a big meal makes me tired. For example, today I have a Greek yogurt with almonds to mix in, homemade gluten-free cheddar crackers, an apple, and a sunbutter bar.

Other things I like to bring include veggies with hummus, other fruits (oranges, pears, bananas), cheddar cheese cubes, etc.

I'm trying to eat healthier. I typically pack my lunch during the week for work. I used to eat a frozen meal/cheezeits or chips and maybe a piece of fruit.

The past few weeks I've been having a sandwich on whole grain bread, nuts (almonds, pistachios, etc) for my salty crunchy craving and vanilla yogurt with frozen mixed berries. I love the cold berries and yogurt. Makes me feel like I'm eating ice cream!

I feel a lot better. What are some of your favorite, easy lunch ideas?
