&#60;p&#62;Rosemary White Bean Soup Recipe&#60;/p&#62;
&#60;p&#62;Here’s what you need:&#60;br /&#62;
1 ½ c cannellini beans, cooked (or 1 15 oz. can, drained and rinsed)&#60;br /&#62;
1 large onion, chopped&#60;br /&#62;
1 tbsp olive oil&#60;br /&#62;
1 clove garlic, minced&#60;br /&#62;
½ branch fresh rosemary, de-stemmed&#60;br /&#62;
2 c vegetable broth&#60;br /&#62;
Salt and pepper to taste&#60;br /&#62;
Here’s what to do:&#60;br /&#62;
Place olive oil in a large pot and sauté onions until translucent.&#60;br /&#62;
Add garlic and cook 3 more minutes.&#60;br /&#62;
Add beans, rosemary and vegetable broth and bring to a boil.&#60;br /&#62;
Reduce temperature to low and simmer for 10 minutes.&#60;br /&#62;
Blend until smooth using an immersion blender.&#60;br /&#62;
Add salt and pepper to taste and enjoy.
