I have one to add! I made two crustless quiches from a Weight Watchers recipe last week - They were delicious, cheap, and we ate them for DAYS. The squares microwaved perfectly for both dinners and breakfasts. Of course I had to call it an "egg and cheese bake" because my husband is of the mindset that real men don't eat quiche lol

I have been thinking about this too, because although we eat healthy foods, our bill has been around 500+ a month for two. This time of year feels especially hard, since there is no fresh fruit that is local yet. We love the farmers' market in the summer. It is cheaper and fresher than the store!

FWIW, we also just roasted a huge pork.shoulder that we got on sale. We have gotten so many dinners out of it that we put some of the cooked meat in the freezer for later!

We're certainly no experts at food budgeting, but I like cooking meals where we can use elements differently the next day, e.g. if we have a value pack of chicken breasts that we're grilling or pan-frying for one meal, then we shred them into a pasta sauce the next night or could even add them into a soup for a third meal.

@caffeinated: Really? I buy the mama rosies frozen spinach and cheese raviolis for less than $2.00/bag. I bet the fresh ones are more expensive though.

We are around $550 a month for food for 3 of us (LO is only 5 months old but this includes her formula) and I try to really look at what meats are on sale for the week, and I definetley look at what fruits/veggies are on sale as well and plan my meals around them. If I make casseroles I will use frozen veggies instead of fresh to cut down on cost.

@skipper2010: that sounds good, but i find that store-bought ravioilis are so expensive!

$450 is amazing. We spend about $600-700 a month for a family of 3, and LO is not even 1 yet.

I like making burrito bowls. Can of black beans (even organic is relatively inexpensive), simmered in cumin, garlic, onions, on top of rice. Add slices of avocado, some shredded cheese, lettuce or cabbage, salsa or chopped tomatoes, cilantro and some greek yogurt. That is my go to healthy but cheap meal. :)

Spinach raviolis drizzled with olive oil with a side garden salad. Cheap and a good way to get plenty of veggies in.

We eat pretty healthy, but I feel like our grocery budget is out of control! Surely we can do better than $450 a month for just the two of us. What are some of your favorite healthy recipes/meals that are inexpensive too?
