Thanks for all the ideas! I don't really want to add any more carbs - I feel like the waffles & hashbrown casserole are enough. I might do an egg casserole though... any suggestions?

I would add pancakes, as an alternative to waffles so people have options
And then have turkey sausages as well

You can always make a breakfast pizza! I've had this before at a work conference and it was great. It's basically like an omlette on top of pizza crust. You could even make mini personal pizza's, people could put their own toppings on and you can pop them in the oven at the same time on multiple sheets.

If you're doing eggs and cheese, a quiche is literally just adding a crust! If you like them, they're easy to make and great to serve to a group. Otherwise my favorite (NOT vegetarian in any way) breakfast is chorizo sausage out of the casing, browned on the stove, tortillas, and eggs. You can use scrambled but I typically just crack the eggs w/o breaking the yolk, put a lid on the pan and let them cook sunny side up, but well done. People then can make chorizo/egg tacos, or can use the tortillas for your cheesy eggs. It's easy to just set out with some salsa, green onion and shredded lettuce and cheddar cheese. Everyone loves tacos!

we love biscuits and gravy, you could do a sausage-less version of the gravy.

You could do a yogurt bar – plain yogurt and then toppings like granola, fruits, etc.

One thing I sometimes make for a brunch is a hash. Its cheap and easy (use a cheap cut of meat and let the crock pot take care of the cooking). Then serve with some fried potatoes, sautéed peppers and onions (can make these ahead) and an egg on top. Its different but easy and budget-friendly.

I had baked peach French toast casserole at a brunch before and that was really good! I don't know how to make it though :/

Oh man, now I want some scrambled eggs and bacon!!! Nom nom

I would consider doing an egg casserole - they are so easy to whip together, then you just pop it in the oven!

Our group of friends has decided to do dinner at each other's houses every Thursday night. I am a bit too antisocial for this, so I am just getting mine over with this week. :) We decided to do breakfast for dinner because everyone likes it, it's relatively easy, it's fun, and DH likes to make waffles so that works.

The one thing that's tricky is that one of our friends is a vegetarian. She does eat dairy but no animal products including eggs. I found a recipe for eggless waffles that I'm going to use. Right now our menu looks like:

- Waffles with toppings (syrup, whipped cream, chocolate chips & strawberries)
- Cheesy hashbrown casserole
- Bacon (this is obviously not for the vegetarian)

I was thinking of adding some scrambled eggs, too - maybe cheesy? I want to keep the budget down so I wouldn't want to do anything fancy like quiche. What do you think? Is this fairly complete? Keep in mind its a casual get-together with friends so no need to go over the top... but I do want to impress!
