<description>&#60;p&#62;I usually take a couple loaves of quickbread with me when we go to the lake/beach for a weekend - good for a snack or breakfast and keeps at room temp.  Banana bread and cherry bread are both hits with my family.

&#60;p&#62;For meals, I'd probably take things that can be assembled easily while you're there - bread, nut butter, and bananas for quick and easy sandwiches, hummus and green/red peppers, oatmeal, pitas that you can heat up over the grill with laughing cow cheese spread and pepperoni, that kind of thing!

<description>&#60;p&#62;We are going to the beach for a few days this weekend. We will be staying in an RV that has a tiny kitchen so I want to make some snacks at home to take with us.&#60;/p&#62;
&#60;p&#62;I wanted to make the Skinnytaste Lemon Cheesecake Yogurt Cups (these are sooo good), but we would have to take a big cooler with us in the car to keep them cold during the 7 hour car ride.&#60;/p&#62;
&#60;p&#62;I am thinking some sort of cookies or chex mix would be the easiest thing. No chocolate because it will probably melt.&#60;/p&#62;
&#60;p&#62;Any ideas?
