definitely more soups, and something to warm the stomach but easy to digest like porridge or chili! i feel like salads are too hard to digest and tiring to chew, especially after a major surgery!

@locavore_mama: I don't know if this is too high sodium but I love this super easy taco soup from weight watchers. Just but low sodium canned beans, corn, etc

1 lb cooked, drained lean ground beef or ground turkey
1 medium onion -chopped
1 can pinto beans
1 can chili hot beans
1 can Rotel diced tomatoes
1 can whole kernel yellow corn
1 can diced tomatoes
1 pkg ranch dry dressing mix
1 pkg taco seasoning mix

Brown beef/turkey along with onions. Drain off any excess oil. Add the ranch and taco seasoning packets. You can add all the cans with liquid or if you opt to drain off the liquid add 4-6 cups of chicken or beef stock. Simmer all together for 30 minutes.

@locavore_mama: you could do a leek and butternut squash soup. To speed up prep you could buy the precut cubes of butternut squash.

@locavore_mama: if you're looking for a heartier easy lunch idea here is my FAVORITE chicken salad recipe. I just use the chicken breasts off of a rotisserie chicken and it's more than enough. It's so freakin good. We have it all the time bc it's protein packed. Eat with some good bread or crackers or a pita

Easy Chicken Salad

2 chicken breasts shredded
1 cup craisins (or use fresh grapes halved)
1 cup cut celery
1 cup chopped cashews
1 cup Mayo
1 Tbsp. sugar

If she needs a liquid diet/meal post-op, I'd send fancy juices like the Odwalla ones, or a homemade mix of carrot and orange juice. Less thick smoothies might work, too.

I like broccoli salad for something tasty and somewhat healthy. But with her being in the hospital, maybe something like a baked spaghetti or veggie lasagna?

I would repeat the soup for after surgery because she will likely be on a liquid diet due to the anesthesia. Then try something soft like pasta to ease her back into a regular diet.

MIL will be in in the hospital all week and hopefully home by the weekend. Meanwhile the hospital food is just atrocious.

I've been making her lunch and dinner and DH has been buying her breakfast when he goes up. But with tomorrow being Monday I'm back to to work.

Any ideas for quick meals to put for lunch? Her dinner will be our dinner leftovers from the night before so that's not an issue.

Lunch is what I'm struggling with.
I don't want to do deli meat sandwiches. I want her to have something more nutritious than that. I made chicken soup for her for Saturday and plan to do that for lunch on Wednesday before her surgery too. I thought something easy on the stomach like soup would be good before surgery.

Any ideas? Thanks!

DH will be up at the hospital a lot along with both of us working FT. So I'll have minimal prep time after LO goes to bed.
