I think doing baked pasta that can be made ahead would be easy as well or a roaster of pulled pork/chicken/beef. I would then do a huge thing of potato or pasta salad, chips, and veggie/fruit tray, followed with cake.

Another salad type dish I really like is Broccoli salad. It's very easy to make and you can bake the bacon in the oven rather than on the stovetop. I use this recipe but leave out the raisins and cashews.

Assuming Subway trays mean sandwiches, why would you need meat and cheese trays? I am assuming that's all deli meat?

How about a pasta salad that doesn't need to be refridgerated? I do one with bowtie pasta, ready made pesto, mozzarella balls and shredded zucchini and carrots.

@travelgirl1: If you're looking for things that are easy to do ahead of time and don't need to be heated up, I think sandwich trays are the way to go. Then you can have various salads that can also be made ahead along with the other things you listed.

I like the pulled meat idea. You could enlist people to each roast a pork shoulder. Super easy and cheap. Probably if 4 or 5people each do a chicken and a big (7-9 lb) pork shoulder you'd have plenty
All you would need are a ton of burger buns, Cole slaw (can buy at Costco), chips, fruit salad (if you want, or green salad) and a lot of bottled bbq sauce. This would be really easy
You actually don't need a crock pot. Roasting pan, oven at 325, bbq rub, 6 hours, done.

I second pulled chicken! Put chicken breasts in the crockpot with some BBQ sauce, then shred them (a Kitchenaid stand mixer does this fabulously and so quickly!). I've made it ahead of time and just reheated and it's still delicious. You could also do some BBQ/some buffalo? And then prep veggie trays and maybe some make ahead pasta salads the night before! Not very formal, but hearty and yummy.

ETA: just saw your comment about no crockpots. You could also bake/boil the chicken breasts and then shred and reheat with sauce?

@MUI831: unfortunately, around 1pm (baptism is after the 12.15pm mass) so people will want lunch. We would have preferred to do an afternoon tea type party really but people will be hungry. That is a good idea about doing the meat and cheese trays ourselves!

@tofuwad: I bet a brunch one would be a lot of fun! I can't imagine a lot of the older relatives would get on well with burritos though. They are very much your meat and two veg English folk.

@yoursilverlining: good ideas, thanks! I don't think the family own many crock pots. We do have the option of using the kitchen and serving gear at the venue, but were thinking cooking too much might complicate it. BIL just had his third kid, our kid doesn't nap in a crib, so we are short on time we can commit. A couple of pasta dishes could work well though, thanks!

@Mrs. Lemon-Lime: I will look those recipes up, thanks!

130 people? Dang! How many people can you get to help you / assign a dish to?

Cheap thoughts for food that would feed a lot:

Baked ahead trays of pasta that can be reheated morning of (and then served room temp), with green salads (for salad toppings just dump a can of black olives in a bowl, chop up a red onion, pint of cherry tomatoes left whole and a bag of croutons). Baked ziti with spicy sausage (and one just pasta and sauce).

Crockpots of pulled chicken/pork, buns, cole slaw and pickles, BBQ sauce.

Crockpots of chili with toppings (cheese, sour cream, scallions, chips, etc.)

Pesto pasta salad (served room temp)

Platters of meat, cheese, breads, red onion, pepperonchino, lettuce, tomato, etc. Serve with chips, etc.

I think your idea of the platters of sandwich fixings would probably be easiest especially if you can farm out some sides to relatives. Like have 2 people bring big bowls of potato salad, someone bring a pasta salad, etc.

I went to one that was a brunch. So OJ, cut fruit, sliced wraps from Costco (I can't remember what these are called), and a self serve breakfast burrito bar (aluminum trays with scrambled eggs, sausage, costco's precooked bacon, and bowls of salsa and cilantro). The eggs, sausage and bacon were premade and then heated in the micro/oven beforehand. But this was a party of probably 50 people and not 130!

What time of day will the "after party" be? That might help with suggestions. Do you need to do a full meal or can you get away with less?

I know I've gone to the deli and made my own meat and cheese trays. I ordered a bunch of sliced meats and cheeses and rolled them up and arranged them pretty on a platter a long with rolls.

We are having DS baptized along with his baby cousin in a few weeks. It was meant to just be immediate family, which in itself brought the head count to 80. But as these things do it has spiralled and now we are looking at more 130. Sigh.

None of us want an expensive do and we don't have lots of time to make complicated dishes etc ourselves.

How can we do this cheaply and quickly?

Initial thoughts are to order a few Subway platters and then do things like crisps, salad, cheese and meat trays, cut up French sticks with oil and balsamic.

For cakes we are grabbing grocery store ready iced ones and adding ribbon and personalised toppings from EBay.

Any tips? Recipes for meals that can be made in bulk and don't need to be heated up?
