I still struggle with this at 22 months. I'm ashamed how often he gets his veggies from a pouch, but at least they allow me to not stress quite as much. Like some others have suggested, I mix veggies in eggs and that's usually pretty successful. Spinach and cheese in an egg cooked in the microwave is a good quick dinner. Also he will devour veggies put into spaghetti sauce. I make spaghetti with zucchini, summer squash and mushrooms in the sauce and it's probably his favorite thing on this earth.

@Silva: My LO has never eaten things off the ground, but from the time she had her pincer grasp down, if she saw something on the ground (fluff, real or imaginary), she would stop what she was doing, pick it up and bring it to me or DH. When she does it now, I tell her to take it to dada and tell him to vacuum :)

@Freckles: I will eat veggies off her plate all the time. Say yum yum and she just laughs at me and tries to feed me. Stinker! Spinach and broccoli give her gas. I think I just need to chop them up more and find things to hide them in.

My LO loves any kind of pasta and cheese, so I make her casseroles with that veggie pasta- http://www.barilla.com/aggregator/product/1306, chicken, cheese, and chopped up broccoli, roasted red peppers, and carrots. She loves it!

At R's age, i made a lot of soup/congees for LO. I diced the veggies up finely and added it to soup, and she ate it up with no problems!

Once she started getting picky (in her 2nd year), i've resorted to hiding the veggies. I'll make a creamy kale pasta, puree carrots and red peppers into her pasta sauce, add spinach or kale into her morning smoothie, etc. How about sauteeing some spinach, squeeze out the water and then puree it into her mac and cheese? Spinach has such a mild flavour that she probably won't notice.

Also, kids love to eat what their parents are eating. For one week DH and i ate raw red peppers at dinner, and eventually she ate one! Sometimes, i'll pop a veggie in my mouth an exaggerate how good it is (or even better steal it from her plate) and she'll wolf it all down.

@Mrs. Blue: Not yet. Last night I put meat in the quesadilla to get her some protein but I can try veggies this week. I will try the veggies in the egg this weekend. I don't want to send for breakfast till I know she likes it.

I have the opposite problem. The boys absolutely refuse all meat but literally have never refused a single veggie or fruit. I love that they eat so many veggies, but I have to work hard to get protein in their tummies. Thank God for eggs and yogurt!

Have you tried putting some veggies in scrambled eggs or inside a cheese quesadilla?

@Smurfette: My DD is like a freaking garbage disposal, consuming all food in sight, so I'm not sure how helpful this is, but I know she really loves things that I roast with balsamic vinegar. So I toss with olive oil, s+p, roast in the oven and then drizzle with some balsamic in the last few minutes of cooking time.

@Silva: Hahahahahahaha about eating off the floor! K honestly spends all day searching for crumbs on the floor. We do feed her. She eats a lot at meals. But then she crawls around and eats crumbs (we could vacuum twice a day and it wouldn't matter, she'd still find stuff) and looks at us like, "You people! I am SO hungry!"

Last night I saw her sitting on the rug in our living room munching on something....I put my finger in her mouth and pulled out a piece of claw that our cat had shed. Lovely.

@fancyfunction: It is hit and miss with eggs.
@cmomma17: Yep! She picks out the shells. She is a smart one.
@yoursilverlining: I hate to buy them fresh cause 1) they are so much more expensive 2) and it is so wasteful cause if she won't eat them, and we only need veggies for dinner (school lunch) Plus I don't like cooked carrots, green beans, or peas, so I can't even help eat them and DH is gone during the week. Plus frozen is so much easier. She wants to eat like right when we get home. But I will try some carrots that way this week, I have some at home.

Hummus, smoothies, folded into risotto. I like to offer things all mixed together as then it seems like a whole meal that she has to eat every part of instead of pick and choose.

I cook/season her veggies the same way I like them and (I'm lucky), she loves them!

Kale: in green smoothies (w/ milk, greek yogurt, & berries) and baked into chips (she begs for them)
Brussel sprouts: sautéed with a little olive oil and little pieces of ham
Spinach: in smoothies or sautéed
Peas: steamed with a little butter
Carrots: organic, peeled, roasted
Butternut squash: roasted w/ olive oil
Sweet potatoes: roasted or steamed w/ a little butter
Green beans: roasted with olive oil and parmasean cheese
Zucchini: roasted or sautéed with garlic herb mix
Broccoli: steamed with a little butter, sometimes with cheese, sometimes roasted with olive oil
Cucumbers: dipped in ranch or hummus

I second or third the suggestion of changing up how you offer the food. Sometimes my LO won't eat in her high chair, but she will eat walking around with food in a cup. She also prefers to eat from my plate. She likes to put things into containers, so sometimes I will give her empty containers and let her fill it with food (which she then eats).

We're still stuck on pouches to make sure she's getting fruits and veggies. Anything that's somewhat "wet" is generally rejected. We tried roasted broccoli yesterday and that went nowhere. I'm going to try some roasted squash next. We'll see. I feel comfortable that at least she's eating them from pouches - I figure she'll start the real thing eventually. Unless I'm sending her crates of pouches to college. That would be a problem.

Are you only giving your LO frozen veggies? If so, I don't mean to sound like too much of an elitist yuppie parent, but frozen veggies often taste super bland (or just yucky) compared to fresh veggies. Roasting brings out the sweetness in many veggies, and some LOs (like mine!) want things well seasoned - be liberal with your nutmeg and cinnamon!! Wilted fresh spinach, eggplant and all kinds of squash (with a little shake of Parmesan cheese on top) are favorites.

I also make her pasta sauce from puréed sweet potato, carrot, squash and tomatoes. Looks like regular pasta sauce, is just a touch sweeter than normal. She'll slurp that off pasta 7 nights a week!!!

Does she like eggs? I've started making mini-quiches - essentially scrambled eggs baked in muffin cups and I add a bunch of cut-up veggies and cheese.

I also add veggies to her pasta - like tonight was baked ziti with broccoli and zucchini.

DS also hates veggies except sweet potatoes. I try to sneak them in - pancakes, French toast, healthy muffins, etc. I make hummus and add spinach. Also he likes crunchy snacks so he goes crazy for freeze dried or dry roasted veggies like peas, corn, edamame. He used to eat pouches but is not much of a fan anymore. We give him a little of whatever we eat and usually he won't touch it but he has tried some broccoli and squash that way. Normally just a tiny piece bit its something.
