<description>&#60;p&#62;I like to make spoonbread with mine after roasting it. Even my super picky six-year-old eats it, and we usually do it as an entree. Carrots, bacon, cornmeal, squash, cheese, fresh rosemary... now I might just have to make some tomorrow! You can also cut it into strips, toss with some minced fresh thyme and sea salt and EVOO and roast it and eat them like fries.

<description>&#60;p&#62;I just cut it in half, flip it upside down on a baking sheet, and bake at 400F for 60 minutes. It gets a little caramelized, and then I sprinkle a little bit of salt on it.

<description>&#60;p&#62;We bought an acorn squash that I want to cook up for dinner tonight. Any suggestions? Usually I quarter it and then put some butter/brown sugar on it and wrap it in tin toil and BBQ it. SO yummy. But I'm open for healthier suggestions!
