<description>&#60;p&#62;I don't have recipes handy right now, but I use lentils pretty frequently. The dish varies by lentil type, here are some favorites. Red or yellow lentils usually get puréed in broth with a touch of béchamel to make a creamy soup. Black lentils get cooked in the slow cooker with lots of Indian spices for a super yummy dal (the recipe I use is from the book The Indian Slow Cooker). Green lentils either go in a soup with a chicken broth-tomato base and some kind of leafy greens like spinach or kale, or in a cold summery salad with bulgur, parsley, red onion, and an olive oil-vinegar-lemon dressing.

<description>&#60;p&#62;Lentils don't take very long to cook. maybe an hour, tops. I like to sauté some garlic, onion and chopped carrot for a few minutes and then sauté the lentils before adding liquid and a bay leaf (I usually use stock and several shakes of hot sauce) Bring to a boil and then cover and simmer for like...half an hour? 45 minutes? Maybe not that long? Lol, sorry, I usually just let them go until they're tender. &#60;/p&#62;
&#60;p&#62;Sometime I like to brown sliced sausage before adding in the onions and such. My current favorite is curried lentils and sweet potatoes (which I'm making tonight).

<description>&#60;p&#62;I saute veggies then add lentils, a bay leaf, and chicken broth and let them boil covered for about half  an hour to 45 minutes. They don't take long to cook, and I actually don't even soak mine beforehand. Mmm, lentils :)&#60;/p&#62;

I either make soup or simmer then in chicken stock with a couple garlic cloves and chopped onions while I'm preparing the rest of dinner. I just pick out the garlic when serving.&#60;br /&#62;
Orangette has two great lentil recipes. I like the red lentil one and the green lentil coconut one. Yummy!
