<description>&#60;p&#62;We do it like @laughlines; let the meat come to room temp, and put it in a HOT pan. We rub the steak down with a little olive oil, add it to the hot cast iron skillet and pop under the broiler for a couple minutes each side. Crispy exterior, tender rare (or however you like it) center.

<description>&#60;p&#62;Let it come up to room temperature before cooking and be sure whatever you're cooking it on is very hot before putting the meat on (don't put it on right when you turn on the heat, wait until it's hot).  Only flip once, don't keep flipping back and forth.
