I would only do this with "day of" meat. I don't feel comfortable leaving any food just sitting out to defrost. Especially since I'm prone to forget about it for way too long, but even if I were perfect I'd never feel safe doing that. I use the microwave on the very rare occasion that I HAVE to have something that I've forgotten to thaw in advance.
