I usually just sautée a little diced bacon or just coconut oil (if you want meatless) in a nonstick pan. Then I shred the sweet potatoes in my food processor or by hand with a grater. Dry the sweet potatoes off and then add to the skillet at medium or medium-high heat. I season with garlic and onion powder, salt and pepper. Once the sweet potatoes are crispy and cooked through, you reduce the heat to low and remove them from the skillet or to the side and add the eggs. Once the eggs are cooked to your taste (I like my runny) remove it all and plate. I then add sliced or cubed avocado to the top. I kind of cut everything up and mix it all together and voila!
