We get 1-dozen eggs from a local farmer each week, so we are required to go through a lot of eggs at our house in order to keep up! The farm-fresh eggs are SO tasty. I may get sick of eggs here soon. DH is deployed and its just me at home. We have chickens, and I am getting way more eggs each day than I could ever eat. Everyone tells me to sell them. And put hot sauce on top :) I make a pot of it once or twice a week so whenever I want some I can scoop some out and heat it up in the microwave. I've never heard of them over a bed of quinoa! how do you prep the quinoa? plain? sauce? I LOVE over easy eggs. I used to love sunny side up, but found that a lot of restaurants didn't cook it right and there would still be some uncooked ... goo on top, so I started doing them over easy which is just as good (or better!) to me! I also like a scramble on occasion. I love poached, hard boiled, and fried hard eggs! I just kind of love eggs.
