I make a breakfast that consists of homemade breakfast potatoes mixed with onions and bacon and then plop a couple of runny eggs on top. The potatoes are great for sopping up that yolk! It's usually enough food that I don't even need bread for the sopping job. My favourite way to eat an egg is the way they make boiled eggs for ramen in Japan where the yolk is still runny but lightly cooked so it's thick and creamy tasting. I do like scrambled eggs and omelets as well. But if it's scrambled or an omelet, I have to have salsa on them.
