<description>&#60;p&#62;When making a quick version for LO, I use cooked spiral pasta, cottage cheese, sharp cheddar and Parmesan. You can't go wrong on measurements. If you use a lot of cottage cheese, it will be more creamy. If I have Gouda, I will sub that for sharp cheddar. Microwave for a minute or so (until cheese melts).  So good and easy and I like that it had cottage cheese instead of cream or butter. <description>&#60;p&#62;Flour and butter roux, add milk and then add extra sharp cheddar cheese. Season with S&#38;amp;P and once the sauce is ready, toss over al dente elbow macaroni. I bake it for about 20 minutes, with buttered bread cut up into squares on top. &#60;/p&#62;

<description>&#60;p&#62;I make it pretty basic for the kiddos- elbow macaroni cooked al dente and then a roux- butter, flour, milk, s&#38;amp;p, nutmeg, then add in grated cheese, then pour in macaroni. I generally cook the pasta in one pot while making the sauce in another and they are ready at the same time to mix together.

&#60;p&#62;-make a roux, add cream cheese, Dijon, salt, pepper and sharp cheddar. I combine the sauce with penne, top with paprika, cheese and bread crumbs and bake.&#60;/p&#62;
&#60;p&#62;-elbow macaroni, cream of cheddar soup, garlic, salt, pepper, cheese, bread crumbs and bake.&#60;/p&#62;
&#60;p&#62;I've also added puréed sweet potatoes and squash to my cheese sauce which was yummy.

<description>&#60;p&#62;I don't have a recipe because I grew up making real mac and cheese (not from a box) so I pretty much have it down to a science. &#60;/p&#62;
&#60;p&#62;When I want a basic and quick mac and cheese: elbow macaroni or some other short pasta, sharp cheddar cheese, butter, milk, salt, pepper, ground mustard. Cook the elbows first (not quite all the way cooked), dump some of the pasta in a big pot and add some pats of butter and milk, stir in sharp cheese and mix and keep doing that until all the pasta is coated. We might eat it just like that if we're in a pinch or I bake it with a mix of Italian breadcrumbs and more cheese.&#60;/p&#62;
&#60;p&#62;When I want to be gourmet about it I make a roux with flour and milk and add sharp cheddar, gruyere, and some other cheese and then add the pasta.
