@mrsjyw: We do the same, yogurt & fruit for breakfast and the protein, grain, veggie combo for the other meals. LO is good with most veggies except leafy greens. I sneak them in meatballs, chopping finely and mixing with rice, and nuggets.

Good question! This is something I worry about. I try to make sure she has a protein and veggie at most meals and throw in a fruit for "dessert" or have fruits for snacks.

They always want to eat what I eat. So if I have veggies on my plate .. they want it, too!

I include a fruit with every meal, and at least one veggie for lunch and dinner. Luckily he loves fruits and veggies so it's not a hardship. I also rotate the foods by color, like if he had orange veggies today I'll give him green ones the next meal, same with fruits.

He's pretty good about eating veggies, especially if they are in tomato sauce or in a smoothie (i.e. green smoothie). Veggie muffins, pancakes, and breads are also good!

We just try to eat more well rounded ourselves. TRY! My son hates greens, but he's willing to drink green juice so I make him that.

We try to do a protein, veggie, grain/pasta for lunch & dinner. Bfast is almost always yogurt, fruit, and sometimes a sausage/egg. He eats TONS of fruit, but need more ways of incorporating greens!
