<description>&#60;p&#62;I'm not a big fan of plain steamed vegetables and prefer to est my veggies when they are incorporated into dishes. &#60;/p&#62;
&#60;p&#62;Our favorites:&#60;/p&#62;
&#60;p&#62;Butternut squash soul with sausage and kale.&#60;br /&#62;
Vegetarian chili with corn, beans, peppers, tomatoes&#60;br /&#62;
Zucchini and squash and onion sautéed with fajita seasoning, chopped ham and black beans&#60;br /&#62;
Sweet potato fries&#60;br /&#62;
Roasted cauliflower and onions&#60;br /&#62;
Breakfast casserole with tomatoes, kale, sausage and herbs&#60;br /&#62;
Pizza with eggplant. Or beets, feta, goat cheese and honey. Or artichoke hearts. Or zucchini and squash.&#60;br /&#62;
Roasted butternut squash&#60;br /&#62;
Pumpkin soup&#60;br /&#62;
Kale and apple sautée&#60;br /&#62;
Roasted asparagus&#60;br /&#62;
Honey and orange glazed carrots&#60;br /&#62;
Kale chips&#60;br /&#62;
Taco salad with lots of beans, red peppers, corn, tomatoes, salsa&#60;/p&#62;
&#60;p&#62;With salads my rule of thumb is: lots of greens, a fruit (berries or apples), a cheese (usually goat or feta), and a protein (nuts, sunflower seeds, or chicken). &#60;/p&#62;
&#60;p&#62;Moosewood cookbooks are great vegetarian cookbooks that can give you lots of ideas!

<description>&#60;p&#62;@yoursilverlining:  he doesn't like swee and even my tart smoothies were unappealing. He drinks a protein shake for breakfast- just adds water then he eats protein bars for lunch. His one real food meal is dinner so I'd like for him to eat a variety of veggies.

<description>&#60;p&#62;@yoursilverlining:  I agree, i never understood the commercials where you have these thick velveeta sauce being poured over broccoli. But broccoli is delicious!  :silly: &#60;/p&#62;
&#60;p&#62;I usually roast veggies which makes the veggies a lot sweeter. I also add baby spinach/kale to smoothies, and grate carrots into my tomato sauce. One thing i've done recently was grate carrots onto the pizza base and LO loved it!

<description>&#60;p&#62;@PurplePeony: Yes, totally this. Of course, both my husband and I like veggies, so we don't have to mask anything, which helps!  :silly: &#60;/p&#62;
&#60;p&#62;I'm personally not a fan of masking in heavy sauces, butter, lots of cheese, etc. as that sort of defeats the purpose. Like, ok you're getting your veggies, but now you're also getting a crapload of extra calories, fats and sodium. Especially if you're talking about corn and peas, which are pretty much just carbs to start with. &#60;/p&#62;
&#60;p&#62;I do like adding veggies (especially dark, leafy greens) to whatever I can. @Mrs. Lemon-Lime:  would your husband drink sweet, fruit smoothies? Kale/spinach can be added to those and it doesn't add any &#34;veggie&#34; flavor!&#60;/p&#62;
&#60;p&#62;Preperation also helps a lot - roasting brings out sweetness in a lot of things, or gives a crispy crust to some veggies. Buying in-season helps too.

<description>&#60;p&#62;We both like veggies except for a few but A couple ways to make them more appealing:&#60;/p&#62;
&#60;p&#62;Chicken pot pie, from scratch with fresh veggies, look for a recipie that uses cream cheese to make the sauce. I make it with whatever's around so I don't have a recipe, we had pot pie with mashed potatos last night and it was awesome.&#60;/p&#62;
&#60;p&#62;I make breakfast cassorole with sautéed whatevers around in it, this morning potatos, sweet potatoes, mushrooms and options. Cheese and sausage hides anything :)

<description>&#60;p&#62;I wouldn't necessarily say that I hide/mask them b/c I don't try to keep it a secret but I'm always trying to put veggies into things so that we'll eat more of them.  This means adding shredded veggies (zucchini, carrots, etc.) or chopped spinach/kale in things like lasagna, mac n cheese, and spaghetti sauce.  I bake with shredded zucchini as well (muffins, pancakes, bread).  I also like to use cauliflower as the &#34;cream&#34; base for various soups and a cauliflower pizza crust is amazing.&#60;/p&#62;
&#60;p&#62;Essentially, anything I make, I try to add more veggies to them.  Yes, my husband has to deal with it and we're still working on DS to like anything other than zucchini that was previously frozen.

<description>&#60;p&#62;pureed soups (especially this time of year- sweet potato, squash, or red lentil + root vegetable soups. I make one a week). smoothies with kale or spinach in them. pea or broccoli pesto on pasta (pureed veggie + garlic + pine nuts + olive oil).&#60;br /&#62;
I try not to &#34;hide&#34; them too much for my daughter, because I think its best if she just learns to enjoy vegetables, but the above meals are definitely ways that I make sure she is getting enough! My husband and I often have small salads with dinner.

&#60;p&#62;Mr. Lime only likes broccoli and sautéed spinach as-is. To get him to eat corn I mix in sour cream and chunky salsa. For portabellas I me marinate them in balsamic dressing. Tonight I am going to add buffalo pepitas to squash and zucchini.
