Hummus crusted chicken. I omit salt and it still tastes great. http://www.gimmesomeoven.com/hummus-crusted-chicken/

@Foodnerd81: Well yes, we tried to prepare our chicken for our LO but things didn't go so well so now we need help preparing our chicken for LO but in a different way...we also had to prepare our dog for LO but fortunately that transition was a bit more successful so no recipes needed for him.

LO is a long way from solids, but I just have to say every time I see the title of this thread, I think of it as a pet... similar to how do you prepare a dog for bringing your LO home... only preparing your chicken for a little one.

But nope... that is not it at all :)

@KT326: We discovered a similar recipe last winter, and it became a favorite!

@pinkcupcake: Wanted to thank you again for the teriyaki recipe. I made it for my LO yesterday and she gobbled it up!

The only way I can get DS to eat chicken is to cook it in the crock pot with mild salsa and shred it. He loves it that way. We usually make tacos or enchiladas with it.

Another fan of Happy Monday chicken here! For littler ones I would possibly reduce the salt though. My kids loved it.

@mrs.cookie: Will try this too, especially since my LO loves pasta!

@betsyboop: my (picky) LOs love this chicken noodle soup I make big batches of. I slow cook chicken breasts in chicken stock (I make my own but you could use cubes or cartons), cubed celery, carrots, potatoes, then a few hours later I add egg noodles, enough so that almost all the chicken stock is soaked up, shred up the chicken, and then my 13 mo eats in with her fingers, and my 3.5 yo uses a fork. Mostly :)

I also make crispy crumbed chicken and my kids go nuts for it!!

@pinkcupcake: My LO is only 13 months and I'm pretty sure his heat tolerance is higher than mine!

I don't make chicken any specific way for him, just however I happen to be cooking it. Last night it was adobo chicken.

Mrs. Confetti's Happy Monday Chicken ( http://www.hellobee.com/2013/08/05/five-spice-happy-monday-chicken/ ) was a big hit and really easy to make (when I made it I removed the skin from a piece for him and seasoned the meat directly).

@betsyboop: yup I do! She's used to spicy foods though so it doesn't bother her, but since your LO is so young, it might be better to omit it ...

@locavore_mama: She's 15 months. I should try the panko prep. DH and I don't eat much chicken!

How old is she?
LO pretty much eats chicken however we do. But her fave is probably breaded with a panko /seasoned bread crumbs mixture then pan seared. She also likes rotisserie. Last night I made a chicken, quinoa and squash casserole. She really liked it!

I've been baking chicken breast with olive oil, salt and pepper for my LO but I feel bad giving her the same chicken cubes over and over again. I've tried pesto, which she likes but doesn't like chicken with BBQ sauce or with tomato sauce and cheese. Any ideas?
