I'm trying to get creative too, but sometimes I cook it with Japanese miso, scallions, and sesame oil and serve with rice. I have also steamed slices of it with soy sauce, scallions, sesame oil and red pepper flakes (omit for kids). Weelicious has a recipe that looks interesting as well http://weelicious.com/2009/02/18/sweet-gingery-tofu/

My LO really likes tofu so I've been putting it into soups for her, but I'm looking for other ways to prepare it. Any suggestions?
