Because it's so starchy, it's a super breeding ground for bacteria. So we just cook it, eat once the button pops, and then store in the fridge overnight in a tupperware. I'd love to get a nice new rice cooker... So you basically take the leftover rice and spread it on a frying pan as a really thin layer (no oil). On low. And you basically toast it on both sides. And you end up with crispy toasted rice. You can eat it like that or better yet, you can boil some hot water, put a few pieces in the pot and boil it for a good 15 or so mins. It starts getting yellow and crunchy if it stays in there longer. If I catch it on the second day, I'll pull out the rice and put in in a bowl or ziplock to make fried rice.
