I use one of those "ultimate crib sheets" on top of the fitted sheet, so when baby girl spits up (or has a blow out, which luckily hasnt happened...yet) I just take the ultimate crib sheet off and wash it. DS spit up a lot when he was a newborn and I was constantly changing the sheets. But I would recommend 3: One in the crib, one in the drawer, and one in the wash.
