<description>&#60;p&#62;I don't feel like we eat a lot of/enough veggies. Honestly I don't like them much. But I'm trying, especially now that LO is eating. Right now it is easy to eat what I want and give her healthy stuff, but I know we are rapidly approaching the point where she will want whatever I'm eating so I'm going to have to eat healthy too lol. &#60;/p&#62;
&#60;p&#62;This week at the grocery store I got red and yellow peppers, onion, sugar snap peas, leeks, salad stuff, and frozen peas. And yellow tomatoes, if we're counting those as a vegetable.

Avocado&#60;br /&#62;
Satsuma imo ( Japanese Sweet Potato)&#60;/p&#62;
&#60;p&#62;Depending on the season I'll also buy other vegetables as well. But these are our weekly staples.

<description>&#60;p&#62;Depends on the week but these are in constant rotation: broccoli, green beans, asparagus, cauliflower, peppers, onions, carrots, celery, cucumber, spinach, kale, baby bok Choy, chinese broccoli, assorted asianveg I don't know English name to, edamame, peas, romaine lettuce, cabbage.&#60;br /&#62;
In the fall months we eat more squash, in summer more Swiss chard, zucchini and yellow squash, watercress and water spinach. I don't cons mushroom and sweet potato to be vegetables! Is corn considered a vegetable?

<description>&#60;p&#62;We pretty much have a cooked vegetable and salad with every dinner...so a lot. Currently: lettuce, tomato, cucumber, carrot, celery, onion, cauliflower, scallions, beets, white potato, sweet potato, avocado, eggplant, bok choy, jicama, zucchini. I think that's it. We also keep a few things in the freezer- green beans, peas, corn and some kind of mixed veggie pack.

&#60;p&#62;always. I always have those things in the house. In the summer we add squash, tons of corn, more tomatoes, avocados, etc. My daughter loves veggies, and I've been trying to cook more with them lately, so we've been loading up. We also eat a lot of fruit.

<description>&#60;p&#62;We are pretty good but can always improve.  We did find a lot of waste with our CSA, unfortunately.  Even the stuff we know how to prepare sometimes didn't get used.  So we didn't sign up this year.  &#60;/p&#62;
&#60;p&#62;@Corduroy:  The kohlrabi killed us.  We got a ton of it.  The best thing my husband made with it was a delicious stir fry.

<description>&#60;p&#62;Wow, you guys are impressive. I buy hardly any! I eat them, but I don't cook, so we usually get delivery or eat out. I'll get all excited occasionally and buy these fresh veggies and think I'm going to make some great stuff and then they all rot.  :bummed:  I really want to get my butt into gear though when my LO starts to eat &#34;our&#34; food. So I have about 1.5-2 months I think. Thats my deadline to start cooking and hence buying more fresh veggies.

<description>&#60;p&#62;I cut vegetables for our lunch every week, for 6 portions, we use 3 bell peppers, 2 English cucumbers, a container of grape tomatoes and a 1 pound bag of carrots. I should mix it up more, but my husband does the shopping and I can't really rely on him to pick what looks good, lol.&#60;/p&#62;
&#60;p&#62;I do an egg bake for breakfast that gets onions and a bunch of brocollini.&#60;/p&#62;
&#60;p&#62;For dinner, I use a lot of frozen vegetables, like peas, chopped spinach and squash.  I would love to use all fresh, but sometimes we just don't eat it and I end up tossing it.

&#60;p&#62;I usually like to get some courgette/zucchini as well but DH isn't a fan.&#60;/p&#62;
&#60;p&#62;Do you like beetroot? You can get it precooked and it's really tasty as a soup, in salads or grated into patties with meat or potato. &#60;/p&#62;
&#60;p&#62;We got vegetable boxes for a while and, like you say, we ended up with a lot of waste - unidentifiable veggies (and I used to work in a greengrocer so I thought my knowledge was ok!) and a surplus of things that I find hard to eat a lot of like cabbage and turnip.

<description>&#60;p&#62;I feel like we are pretty good on veggies.  We like a lot of good healthy ones and LO is thankfully growing up to follow in our footsteps.  For our Sunday shopping trip we bought the following: &#60;/p&#62;
&#60;p&#62;- head of cauliflower&#60;br /&#62;
- 2 stems asparagus&#60;br /&#62;
- Bag of mini carrots&#60;br /&#62;
- 2 bags mixed salad (mostly romaine although we like spinach too)&#60;br /&#62;
- Bag of steamable broccoli and cauliflower&#60;br /&#62;
- 2 zucchini and 1 yellow squash for grilling&#60;br /&#62;
- Sweet potatoes&#60;/p&#62;
&#60;p&#62;I would love to get a CSA for all this but I'm afraid they would give me random stuff I wouldn't know how to cook with and it would go to waste.  Any other type of veggies we can incorporate that are easy to cook/prepare?  We also like acorn squash but not really spaghetti squash.
