<description>&#60;p&#62;You can cook it all together!  Do you have a lemon?  Fresh parsley?  I would peel and chop the vegetables, then mix everything (chicken + veggies) with olive oil, salt, pepper, and whatever herbs you have, plus some paprika if you have any.  If you have an onion to add, even better.  If you have a lemon, cut it into quarters and add those to the mix.  Transfer everything to a baking dish.  Bake at 375 for about 45-60 minutes, turning everything once if you want.  Top with fresh chopped parsley if you have it.  That sounds amazing - good luck!

<description>&#60;p&#62;I can't help you with the meat, but you could easily roast all the veggies together! A little olive oil and whatever flavoring is exciting to you (parm, lemon juice, spices, etc.) Or roast the cauliflower and brussel sprouts and do something different with the sweet potato like bake it, mash it, or do fries.

<description>&#60;p&#62;I would put some butter, garlic, and herbs under the skin of the chicken thights and roast them, and then roast the veggies all together with just some olive oil and salt and pepper. That's how I almost always do veggies--so easy and yummy!

<description>&#60;p&#62;So usually I plan out our meals ahead of time, and follow recipes each night. I didn't get around to meal planning this weekend, so I stopped by the store yesterday and just picked up a couple things for dinner last night and tonight. I'm not great at winging it though!&#60;/p&#62;
&#60;p&#62;Here's what I have for tonight:&#60;br /&#62;
3 chicken leg/thighs&#60;br /&#62;
cauliflower&#60;br /&#62;
sweet potato&#60;br /&#62;
Brussel sprouts&#60;/p&#62;
&#60;p&#62;How would you prepare dinner with those ingredients?
