I don't know about your exact ratios but here are two things we do:

1) Replace ALL the ingredients in brownie mix or cake mix with pumpkin - we mix up a 15 oz can of pumpkin with a box of spice cake mix for easy pumpkin muffins. I wonder if you could do the same thing with sweet potatoes. That seems like it'd be tastier with blueberry muffins.

2) Replace all the oil with the same measurement of applesauce or pureed pears.

Maybe cutting down the oil by half, adding purée, then just enough water to get the batter to the right consistency? I'm winging it!

I believe you can replace the oil with applesauce, or other similar puree, I'd probably start there.

OK, no IDEA in this case BUT in the case of brownies and black beans, you can sub all the oil, water and eggs in one mix batch for black beans pureed with water. So maybe that is a place to start?

My DS likes blueberry muffins from a box - its easy so don't judge

Anyway I thought I would try to add some veggies to it and saw online that baby food works well but I cant figure out how to replace the liquids in the box with the baby food - all the recipes I find are from scratch.

This is the liquid I add:

1/2 Cup Water

1/3 Cup Vegetable Oil

3 Eggs

any ideas on how to sub?
