<description>&#60;p&#62;I usually make little foil pouches, put some slices of onion (and sometimes carrots), lay the fish down, squeeze fresh lemon juice over it and drizzle a touch of EVOO, add on some spices, wrap it up and bake it in the oven.  That or grill it.  Usually the cooked fish separates from the skin pretty easily.

<description>&#60;p&#62;You could do either. My favorite way to eat mahi mahi is when it's been marinated in citrus, garlic, and olive oil. &#60;/p&#62;
&#60;p&#62;You could also just bread the top and place the fish skin side down in the oven.

<description>&#60;p&#62;We bought some mahi yesterday because it looked good, and I figured I'd prepare it the way I prepare tilapia - bread with panko and sautee in olive oil and garlic.  But just as the seafood guy was putting them in the bag, I noticed they had skin on them.  So now I'm not sure how to prepare them.&#60;/p&#62;
&#60;p&#62;Any thoughts?  Do I need to bake like I would salmon and not eat the skin?  Do I just cut it off and sautee like normal?
