I made a stuffed seitan loaf, candied lime sweet potatoes, mashed red potatoes with the skins on, and roasted broccoli. And of course we had cranberry sauce plopped from a can! I made simple champagne and cranberry juice cocktails. </p> <p>I'm excited to eat some left-overs today!</p> <p>Dessert.....well not so much. I tried to make a vegan pumpkin spice cake with maple buttercream. The recipe for the cake called for vegetable shortening, so I used what I thought was shortening here, but it just tasted like grease! It was so nasty!
