@mediagirl: I would make burgers and use the spinach in lieu of lettuce. Or I would do my "lazy korean dinner" which is basically cooking rice with raw bean sprouts in the rice cooker together. Cook up the grnd beef and make a soy sauce, sesame oil, garlic sauce. You season the cooked grd beef with the sauce, mix with rice/sprouts and add more as needed.

@Mrs. Lion: yes! That's what I typically make for him when our daughter and I have sauce. I dump the pot of pasta out and then add olive oil, butter and garlic to the pasta pot. Heat that up, then add parm cheese and crushed red peppers. He loves it. I bet adding ground beef and spinach to that would be good!

@PurplePeony: mmm I love me some Spanish Rice!!

Spinach rice! I make it with tomato paste but you could leave that out.

1) Brown the ground beef in a large skillet.

2) Add a diced onion and cook until the onion is soft and translucent. Close to the end of this process, toss in a minced garlic clove or two.

3) Add a cup of rice, two cups of water, a dollop of tomato paste (optional, or I'm sure red pepper pesto would work well in place of it), salt and pepper. Bring to a boil, then turn down the heat and cover.

4) When the rice is almost done but still a bit crunchy, add the spinach and let it wilt on top of the rice for a few minutes. When it's soft, stir the whole thing up to disperse it through the rice.

5) When the rice is fully cooked, eat and enjoy!

We do Greek pitas. Brown the beef, sautee one red onion, add a can of sliced black olives, feta cheese, and the spinach just to wilt. I normally add a can of tomatoes, but there's no reason you can't leave it out. Yogurt sauce with 2 parts plain yogurt to 1 part mayo (sounds gross, but delicious and gives right texture) mixed with Lawry's lemon pepper seasoning to taste. Line half a pita with some romaine lettuce, add filling and top with sauce.

I would just make some sort of ground beef bowl! Saute the ground beef with some chopped onions and seasonings of choice, then separately sauté spinach/garlic, then top it with an over easy egg!

*If you have other things on hand, you can just sauté those too - sliced squash, carrots, mushrooms, etc. and just throw it all together.

Kind of like a bibimbap like Mrs. Wagon said!

Id make Greek pitas with feta and some yogurt sauce! Or tacos with spinach in place of lettuce. Or pasta with a roasted red pepper bolognese type sauce (red sauce without tomatoes), wilt in the spinach at the end.

Not sure if you have any of these other ingredients on hand, but this is a big favorite in our house. I substitute fresh spinach for the frozen all the time. :)

@mediagirl: bibimbap is really just a mixed bowl... here are the steps I'd take if I had what I outlined for you:

make the rice
saute the spinach with some sesame oil
shred the carrot
fry some eggs sunnyside up
brown the ground beef in a pan and mix in some soy sauce after no longer pink

In a bowl place about a cup of rice, 1/3 cup of carrot, spinach, beef, and put the egg on top. Drizzle about a teaspoon of sesame oil and soy sauce each, and mix well (breaking up the egg into pieces). If it's still bland and dry you can add more sesame oil and soy sauce (I always do it by taste)

It is hands down our kids' favorite meal!

I make spaghetti with spinach. After I brown ground beef I drain the fat. Then, I chop up about 9 oz of fresh spinach leaves and sautee it in the same pan as the beef. Add back the beef and stir in four cheese store-bought sauce.

ETA: don't make this because he can't eat sauce.
