Spaghetti - that's my go-to dinner if there's nothing else available. Just sauté garlic & onions with ground beef, throw in a jar of spaghetti sauce, while you're boiling some noodles.

Stir-fry - this is just whatever veggies I have lying around w/chicken or beef (I usually have frozen chicken breasts in the freezer). Oyster sauce by itself is a great seasoning. Or you could use soy sauce.

Quinoa - boiled in chicken stock, throw in some chicken and veggies.

Also, damndelicious.net has some great recipes that are super simple and quick. I love her!

Sauté an onion, add sliced kielbasa, when that's browned add pierogis. While pierogi are cooking make a sauce 1/4 c honey 1/3 c mustard, 1T vinegar. Mix together and add to everything in pot.

Similar, sauté onion, green pepper, add sausage, cook ravioli, add to pot with marinara and simmer.

We do a lot of tex-mex. One of my favorites is easy quesadillas--rotisserie chicken mixed with frozen corn, some salsa, black beans, cumin and cheese. It's also very easy to make a big batch of bean and rice burritos, with refried beans, rice, cheese, salsa, a can of diced jalapeños if you want. Bake them in the oven and then after they are cool, wrap individually in foil and freeze. To reheat, microwave for about 3 mins.

My go-to quick meals:

Korean Beef Bowl (I add in roasted veggies) http://damndelicious.net/2013/07/07/korean-beef-bowl/

BBQ Chicken Salad http://damndelicious.net/2014/01/03/bbq-chicken-salad/

"Taco Rice" basically ground meat with taco seasoning over rice and can add black beans & green chiles, have salsa & guac on the side, etc.

I buy the Italian seasoned frozen chicken breasts from Target & serve along with pasta or mashed potatoes & a veggie like green beans or asparagus.

I also subscribe to the Fresh 20 so most of my recipes come from there - some are super quick and use leftovers from a previous meal so you just throw things together in a salad, sandwiches, or bake. :)

Do you have a costco membership? In costco's deli (close to where the meat is, where they have stuff like fresh ravioli, fresh soups and sauces), they have these premade (but fresh) chipotle chicken flautas. They are soooooo good, and you can serve them with sour cream, avocado, and black beans. All you have to do is stick them in oven!

One tray in the oven to roast. Last week I did chicken breast cauliflower and chickpeas and cherry tomatoes coated in a spicy sauce of evoo, paprika, cumin & roasted red pepper flakes. Brush over chix and veg/chick peas. Roast and done! You could just do that or ado make rice or quinoa to serve it over. Recipe called for some Greek yogurt dolloped on top that had been separately mixed with same spices. So fast and yum.

@wonderstruck: Yum, I'm going to make this tonight!

My quick/lazy dinners include -

Enchilada rice bake -
Cook 2 cups of rice, steam some chicken then shred (I use my kitchen aide stand mixer to shred meat), mix shredded chicken with green enchilada sauce, sour cream, cumin, adobo chili, salt all to taste, and black beans. Spread rice in the bottom of a 9x12 baking dish, spread the chicken mix over the top, sprinkle with cheese, bake at 350 for 30 minutes.

Broiled pork chops with quinoa.
Broiled chicken thighs with quinoa and mushrooms or rice.
Biscuits and gravy.
Roasted sausage and veggies. Cut up your favorite sausage, cut red onions into wedges, carrots into strips, cauliflower, baby reds in half, mushrooms in half, mix veggies in a bowl with olive oil and Italian seasoning, dump in a lined baking sheet and broil til caramelized, add sausage in the last ten minutes.

I think your Dh should try being pregnant, having constant BH, and chasing a toddler before he complains about dinner. Mine would get a swift kick in the rear

I always keep frozen chicken in the fridge for nights that I want something easy. We always have a bag of Tyson 'grilled and ready' and Tyson tenders - so much easier than hand-breading raw chicken breasts all the time. You can throw them in anything.

You can do a taco bar. Add some Tyson 'grilled and ready' chicken to a pan with butter and taco seasoning and cook/heat through. Put out tortillas, salsa, cheese, sour cream, and a bag of shredded lettuce. Super easy, yummy, and the chicken is good for several days!

@Bao: lolol!!! I make dinner 90% of the time, but when I don't you better believe dh would starve unless we have something like frozen pizza to make!

I love fend for yourself nights. I make something small for A, I eat cereal and dh either doesn't eat or eats something random at 10 at night after pondering for hours!

The easiest dinners I make are probably
veggie stir fry - frozen veggies, rice, and stir fry
sauce
Spaghetti
Tacos

I've been making a lot of baked chicken lately. Dip chicken breast in breadcrumbs, bake at 400 for 20 mins - flip and bake 5 more mins and then do some sort if super easy side like baked sweet potato or frozen veggies

Baked chicken thighs in the oven - 350 degrees for about an hour. I season with mojo marinade, all purpose seasoning, and Goya seasoning. I make rice in the microwave with the rice cooker. Add a side of veggies - microwaveable frozen kind are easiest.

Frozen meatballs and pasta are easy too. Red beans and rice can be easy and quick too. Sauté onions and bell peppers, add canned beans, seasonings, and cooked sausage.

1. Dump a bag of frozen green beans into a baking dish, toss with olive oil, salt, pepper and garlic powder. Take a pork tenderloin, slather it with dijon mustard and sprinkle on a general seasoning like Montreal Seasoning. Place tenderloin on top of the green beans and roast everything at 375F for 45 minutes. Serve with some rice or quinoa or couscous.

2. 5 minute lasagna: Layer frozen ravioli in a pan, cover with spaghetti sauce and mozzarella and parm (ricotta is already in the ravioli). Optional: Add crumbled sausage, frozen spinach, whatever. Bake at 375 for 45 minutes.

3. Panko crusted salmon. Toss panko or any kind of breadcrumbs with some olive oil, salt, pepper, and herbs. Lay on top of salmon filets and roast at 450F for 10-12 minutes. Serve with a squeeze of lemon and serve with steamed veggies and some rice.

4. Mix mayo and parmesan cheese together and spread on any kind of white fish - tilapia, halibut, etc. Roast at 450F for 10-12 minutes.

We often get a jar of indian simmer sauce from trader joes, just throw that in a pot with some broccoli, peas and protein of your choice and serve over rice. Trader joes has really good garlic naan too. I like this sauce: http://www.amazon.com/Trader-Joes-Masala-Simmer-Sauce/dp/B008RBPZEU

These Chicken Cheddar Jalapeño burgers are ridiculously easy and soooo good. I just buy pre-made guac from the produce section of my grocery store to top them. http://www.skinnymom.com/2013/11/18/cheddar-jalapeno-chicken-burgers-with-guacamole/

Fajitas are always easy, especially if you buy pre-cut veggies.

I also usually make big batches of Skinnytaste's Healthy Chicken Nuggets and freeze them. They reheat really well.

These buffalo chicken stuffed peppers are super quick and easy. http://www.homeindisarray.com/2013/10/buffalo-chicken-stuffed-bell-peppers.html?m=1

My husband loves sour cream chicken. I mix 1/2 cup of fat-free sour cream with 1/4 cup of parm cheese, spread on chicken, top with bread crumbs, and bake.

Oh, and meatball subs are easy too!

I'm in the same boat being 37 weeks pregnant and chasing a two year old around. I love cooking and when I'm not pregnant and exhausted I make a lot of homemade meals. But now I'm exhausted and I buy a lot of easy stuff like frozen fish fillets (make great tacos), premade turkey meatballs and sauce for spaghetti, hamburgers, steam bags of veggies or frozen veggies, frozen stuffed shells etc. I'm usually all for homemade things and avoiding the freezer aisles but at this point I will buy what is easy! Or if you want to make something that is more "homemade" make a roast (chicken, pork, ham) where you just have to put it in the pan, season and cook. Throw some veggies in the pan to cook along with it and cook up a baked potato and it's a easy dinner!

I find slow cooked meat to be super easy - lamb shoulder, herb/spice it and a bit of oil, wrap it tight in foil and in a baking tray and let it cook for 3 hours low and slow, then open foil and leave it half an hour and its done. some plain rice, pita bread and a bit of salad.

I also like doing frozen pasta like ravioli or frozen meatballs and a quick pasta. pinterest all day long for ideas hehe

Tell your DH that you're pregnant with a toddler and to pick up carry out if he's going to be so critical, dang! I barely ever cooked when I was that pregnant, he should cut you some slack.

But as for an actual dinner idea...my DH's current favorite is I take a pan, usually a 9x12 or something similar, and put a bunch of chicken in a thick line down the middle, then put cut up redskin potatoes on one side and green beans on the other (or sub in whatever veggie you prefer.) Cover the whole thing with a packet of Italian seasoning (like the dry mix you can buy at the grocery store to make dressing or dip), and cut up some small pieces of butter and scatter them over the top. I usually have about six slices of it. Cook for an hour at 350.

Why no crock pot meals? Just curious.

@MrsMccarthy: I know you said no crockpot lazy dinner but we made this tonight and it was super easy.

2 pounds ham or polish sausage
4 (15 ounce) cans of green beans (do not drain)
8 potatoes
1 small onion
4 bullion (chicken) cubes

Peel and cube potatoes , dice onion. Pour green beans with juice into crockpot, then add potatoes, onion, and meat. After they are all in add cubes and enough water to cover potatoes. Cook on low for 8 hours or high for 4 hours. Add salt and pepper if desired (I didn't need it). No stirring just set and forget.

Try googling "oven baked risotto" - minimal prep, throw it in the oven, stir in butter and serve!

My other staple is meat and veg or salad - just change up the meat each day!
