We just did a couple of days (took advantage of Icelandair's stopover program on our way to Sweden), but it was super easy with a toddler. We rented a car (to note, not ALL cars in Europe have the latch system or locking seatbelts, so something to ask about) and stayed at an airbnb in Reykjavik. We did a lot of hiking, swam in a few natural hot springs, and wandered around the city. It was fantastic and everyone was really friendly and helpful. Let me know if you have any specifics and I can try to help!
