Fantastic idea. I'd go really simple and do black bean burritos, or maybe soup portioned into single servings. You could even just make a big pot of something for dinner for yourself, and just put half of it into single serving freezer bags. Done.

Ok...that corn casserole looks delicious. I make one that's more complicated and not nearly as yummy sounding.

@LindsayInNYC: pulled pork would be great! I make mine in the crock pot (1 pork tenderloin, 1 bottle bbq sauce, 1 can soda). You could send a package of buns and a small creamed corn casserole, I made this one the other day and it was delicious:

http://www.foodnetwork.com/recipes/paula-deen/corn-casserole-recipe/index.html

And it is very few recipes/easy to make!

Or a bean salad (1 can green beans, 1 can wax beans, 1 can kidney beans, 1/4 cup redwine vinegar and 2 T sugar) for a complete meal! :) And totally in season with the new warmer weather! :)

@Mrs D: I ran it by DH cause I figured he'd either be for it or against it. He said his boss is a BBQ fan so I thought about pulled pork even. Send him with that and some buns? I'm gonna have to bookmark that lasagna though - that sounds super easy!!

Meatballs in a sauce with rice!

Red curry and veggies also freeze well

Muffins (breakfast?)

@LindsayInNYC: how about the no boil lasagna on the back of the muellers pasta box? Its my staple lasagna recipe and only requires browning of the meat - I think I could probably rattle off the recipe for you easily too! It probably takes 15 mins to put together (50 to bake) but the great thing is she could portion it out so she could have some now and freeze half for later!

Otherwise I have a recipe for mississippi bean bake which freezes nicely or spaghetti sauce. Most of my freezer recipes are crock pot ones.

I always think a bundt cake is nice too - or anything baked for that matter.

How about some homemade soup?

Ok - sorry just rattling off ideas as I think of them! :)

@swurlygurl: I actually thought of that after I posted this! I didn't want to do a crock pot meal in case they don't have one (I know, crazy, right?!)

You could also do something like stuffed peppers with rice and ground beef. It's not pasta and it doesn't have too much cheese and tomato sauce, which can be something nursing moms are limiting.

Chili? It freezes well, and isn't too time consuming.

Someone brought me a bunch of cut up fruit, which was AMAZING. Healthy snack, and didn't have to do any prep work to get it ready. (pineapple, kiwi, berries, grapes - stuff that doesn't get mushy & brown)

What about a pasta bake rather than lasagna? I like Six Sisters stuff. They have a couple freezer pasta bakes:

My husband's boss (well, boss' wife) is having his first baby any second now. She went in at 6pm last night to be induced and haven't heard anything yet. His boss is a complete workaholic but, surprisingly, is taking two weeks off. I guess he's planning on stopping in and out during that time. DH and his boss are fairly close, even outside the office - they text (work and non-work), we've gone to events (boss also part owns some restaurants). We've only met his wife once though. I just thought about maybe making a freezer meal for DH to take to work for when he stops by. Bad idea/good idea? What are some good ideas? I'm looking for something relatively simple since I would still have to pick ingredients up and work late myself. I love lasagna but that's too time consuming for me... Share some recipes/ideas please!
