I ate sooooo much peanut butter in the first tri.

But I make lots of soups or tacos with a combination of whatever veggies I have / quinoa or lentils /beans/ sweet potatoes + salsa.

I make quinoa cakes that are similar to @LivsMama's burgers- quinoa, beaten eggs, breadcrumbs and onion, then once they're fried, I put poached eggs on top. YUM!

We also mix quinoa with black beans, tomatoes, avocado, lime and chili, and occasionally top with shrimp - yummy southwest salad.

You have way more choices in the uk!
The quorn cocktail sausages are awesome. I use the quorn grounds to cook with.
Jacket potatoes with baked beans and cheese.
Tesco has some great faux meats.

We used sausage, but it would be great without it. The beans weren't overpowering.

@LindsayInNYC: it all depends how hungry he is or how much of a rush he is in to eat! Sometimes he'll eat it all and other times he'll pick them all out. He loves baked beans though! Very frustrating!

@illumina: DH is the same when it comes to beans... I can sneak them in with chili though and he'll eat them. Will he eat them at all?

@LindsayInNYC: @aprk: I love chilli, but DH hates the beans... He eats around them! I just imagine a veggie chilli where he eats just the rice and sauce and picks out the rest!

Definitely lots of good choices with quinoa!

Meat free chili with lots of beans and veggies should be easy to do

Check out TVP (textured vegetable protein) also. I used to use it a lot to make sloppy joes and things like that.

I made quinoa burgers pretty frequently. They have a lot of protein and nutrients.

2 Cups COOKED quinoa
4 egg yolks
pinch of salt
1 onion chopped tiny
1/2 shredded mozzarella (or any cheese of your liking)
1/4 cup shredded or grated parmesan
4 garlic cloves chopped tiny
2/3 cup of italian spiced breadcrumbs
1/2 cup of shopped spinach or arugula or whatever green you want
1/2 to 1 grated carrot

Mix all ingredients together and fry each side in some olive oil to make the outside crispy. Cook through that way, or finish by baking in the oven. I usually do 375 and test the inside since there are eggs in it. Theyre super good, and Liv LOVES them. I make her finger sized ones.

You can also sub any type of veggie you want. Ive used peppers, etc.

I had a HUGE meat diversion while I was pregnant, so I feel ya!

ETA - I cook my quinoa in chicken broth or add garlic to give it more flavor

DH and I are usually big meat eaters, and like DH says, meat should be the focus of each meal. All was good, we had about 10 meals on rotation that were quick and easy to make. However over the last week I've noticed my interest in all kinds of meat is fading and I'm finding it harder to stomach. I just took some chicken out to thaw for tonight and just the sight of it was not good.

So, I'm wondering what kinds of things I can cook in order to get the same nutrients and protein as I used to?
