I have a drying mat there anyway, so I never notice it. I think even though the middle of the sink would be the shortest seam, it would be most noticeable since you use that exact space all the time. I actually just noticed it for the first time today and we have lived here for 3.5 years. @Mamaof2: our countertop looks just like yours- do you know if it's granite or Quartz? We have had a few granite people out and they all have different opinions on where the seam should go. One suggested about a foot from the stove. The other suggested in the middle of the sink.
