I used to can chili without issue, but I won't do it now. Unless you made the sauce with a trusted canning recipe, you can't can it anyway. Freezing is so much easier, anyway.

Thanks everyone! I know that canning can be done...I guess my issue is the one time my mom canned veggie soup with beef the cans blew up or something. It didn't turn out well and I have thy in my mind. Freezing would be SOO much easier! :)

I freeze our homemade meat sauce all the time. Not a big deal. I like to leave some sauce on the side in tiny containers for homemade pizza!

@anbanan15: we did this in the fall with a huge bushel of tomatoes we got from the farmers market! We put them in mason jars with about an inch of room at the top to allow for expansion, then I froze them. Canning is so much work!

I make a marinara that doesn't have meat, and I freeze it since the recipe calls for SO much. It ends up great frozen, I just put it in a ziplock container and then I put the container in a freezer bag.

ETA: You can definitely freeze it with meat, however. The only thing I'm iffy about freezing are soups with pasta in them, since the pasta gets kind of mushy.

My sauce freezes well, but there's no meat. I think meat can be canned and frozen so I don't see why it wouldn't work out in a sauce.

@bluestriped bee: I never made my own sauce before either! I was so hungry for it and found the recipe online. DH was skeptical but yesterday when I came home I found a 1 lb (!) of prosciutto in the fridge lol. Subtle hint for more I believe hehe. I used 2 oz top-self vodka instead of 1 oz like the recipe says and my jar of roasted peppers was slightly larger but otherwise followed the recipe as is. http://www.alaskafishingrecipe.com/healthy/recipes/vodka-rigatoni.html

@anbanan15: Oh, Vodka Rigatoni sounds very yummy. Care to share the recipe. I don't usually make my own sauce so I never froze it either.

If it has meat in it, then definitely freeze. For sauces without meat, I'd say it depends on how much extra you have. Canning is a PITA, so it has to be worth it!

@autumn865: Thanks! I've done soups and such before and they are always fine. I've made taco meat ahead of time and froze that, so I guess it is really the same thing.

I freeze sauce, soups, etc. in the quart size plastic containers the soups come in from Chinese take out. They are the perfect portion size for DH and I to have two good soup bowls or for sauce for noodles. I freeze with meat and as long as its not in the freezer forever it's good!

Do you freeze or can it? Do you freeze or can if it contains meat?

I made Vodka Rigatoni the other day and DH LOVED the sauce (okay so did I and everyone else that tried it) and I was thinking about making a bunch of sauce and either freezing or canning it. I know it can be done, my mom did a lot of canning growing up but my only dilemma is the prosciutto and how that would hold up. She never really canned anything containing meat.
