@grizz: Opps!! Sandwich, eggs, salad, pasta with olive oil, grilled chicken, frozen fish fillets, sautéed spinach, leftovers, make a calzone. Now that I am dieting a lot of salads, fish, and spinach. I eat the same stuff over and over.

@Smurfette: Oh, I meant what do YOU eat! I find myself grabbing a bunch of random since I don't have much time.

@grizz: I eat after R goes to bed. We get home around 530, she eats, for like 10 mins, then we play for 15, then it is bath time, jammies, bottle, and bed. She is asleep between 645-700. So I usually eat 7-730.
Her dinners are a veggie, pasta, avocado, applesauce, yogurt. Tonight I am going to do yogurt and try turkey lunch meat again. She eats the same things a lot and especially in a week,. Otherwise it wastes a lot of food. I make two veggies a week for her. Since I eat a lot of salad, sauteed spinach, and broccoli and she can't eat the last two (give her gas).
I need to be better about more variety with her food, but she just won't eat stuff. And I don't have time to at night to find what she will eat.

@Smurfette: I struggle with dinners since its just me and C, and we're on a tight schedule til bedtime. What other things do you usually eat? I've inadvertantly put myself on BLW lol... He's having avocado? Guess I am too.

Well this week, on Sunday I made quiche - we ate one and i froze the other.
Tonight we're having a crock pot pork shoulder.
Then tomorrow we are having asian mushroom and cabbage wraps (like moo shu pork) and thursday planning on pork and butternut squash quesadillas with beans. Friday we are either having pork bbq sandwiches (if there are still leftovers) or stromboli.

I made eggs, scrambled, in a muffin tin. I put two in container and wrapped up english muffins so I can toast those at work. That, plus a cup of greek yougurt, is my breakfast for the week.

I struggle with lunches, because this is my larger meal of the day and I like hot food.

I put fruit and celery in Ziploc bags. I have two hard boiled eggs for breakfast so those are all in baggies for the week (eat at work). DH will grill me a bunch of chicken breast if I ask him. Then every night I make my lunch, R's lunch and her dinner for the next day. I don't cook much at night during the week, since it is just me. So everything is super easy. Like tonight will be a salad and some kielbasa on top. So I just have to cook the kielbasa.

I've just started to meal prep, also! I made a ton of Cafe Rio-type chicken in the crock pot this past Sunday. I used it in tacos which I wrapped up individually in tinfoil for a grab-and-go type thing and also made chicken tortilla soup.

I did meal prep on Sunday night, and I am thrilled with the results this week. I get out the door so much faster when I just grab a pre-packed lunch. I need to make this a habit!

If you do meal prep one night of the week, what do you make in advance?

I made chicken salad with Greek yogurt, 4 mason jar salads, 6 baked chicken breasts, a crock pot chicken/root vegetable dinner for two nights, hard boiled eggs, and chopped a bunch of fruits and veggies and packed them in individual servings. I would love more ideas!
