I always under bake them, so they come out chewy and yummy. But there are some good suggestions on here!

Baking doesn't always lend itself to scaling well....

a non-firm butter and extra white sugar can make a cookie extra crispy. i've noticed if i don't have brown sugar and sub for white, it isn't the same.

@septca: Again, I don't bake much but I thought it was weird to use a mixer on cookies!! Maybe I will try hand mixing next time!

You want the butter on the colder side - just soft enough to blend. If you stir everything by hand, they come out better. Double the salt. 375 for 10-12 minutes.

It's a near perfect cookie, in my opinion.

@Mamaof2: I've halved this recipe and been fine so its not that. The butter thing totally makes sense although I never realized it before.

@Mamaof2: Yep! That's what the problem was - melted butter = thin and very crispy cookies. Also, sometimes duplicating/halving recipes can make them turn out wonky as well.

@Mamaof2: yeah, it makes a difference.. if you just use room temp softened butter, it will melt more in the oven as it bakes. If you start out with super soft, almost puddly butter, you are going to start with a thinner batter and it will turn out crispy and thin...

And this is why, like Mae suggests, using a half shortening makes for more dependable cookies because shortening is very stable.. But I like full butter taste myself ;-)

@T-Mom: interesting.... it was WAY melted instead of "soft" like the recipe called for - I had no clue that would make a difference! And yes they were thin!!

@Mae: I purposely underbake mine - 9 mins!

You maybe baked too long? Mine are usually a little crispy on the outside and chewy in the middle. I usually do half butter half shortening. Sometimes I think the all-butter ones are a little greasy.

How was the temp of your butter? If it was on the extra soft side, that can make your cookies thinner and crispier.

Are they crunchy or chewy?

I must admit I usually do the break and bake cookies but DS has been asking to cook/bake so I figure, eh why not!

At Christmas we made a batch and I swear they were chewy - a little crispy on the outside but chewy inside!

Last night we made some but I didn't have enough butter so I halved the recipe and they were soo soo crispy!!! Ugh!!!

What went wrong?
