<description>&#60;p&#62;We have trouble getting ours to eat veggies, too. We went to a class put on by a nutritionist that deals with picky eaters, but the only real advice she gave was &#34;keep offering repeatedly&#34;, and &#34;if they don't eat what's given, don't cave and give them what they like&#34;. So, not a huge help, but she did say that as long as they eat a couple different kinds of fruit at least, it's not a big deal that they won't eat veggies yet.&#60;/p&#62;
&#60;p&#62;We had some success with smoothies, but they had to be pretty basic and fruity. We recently discovered that he likes V8, tho, so when I'm desperate to get some veg in him, we have that to fall back on.

<description>&#60;p&#62;Steam some cauliflower, then grate it or purree it an out it in Mac n cheese and other sauces! It's colorless so it's hard to spot. Even my son who will pick out anything he sees eats it up! It's a bit of a pain but it works and its a good cruciforous veggie.  &#60;/p&#62;
&#60;p&#62;Our son will also eat spaghetti squash with tomato sauce and cheese and anything in a pouch. Some have success with smoothies and juicing too.

&#60;p&#62;@QueensBee:  That is why these recipes look so hard for me. I don't think they sound good, so if she doesn't eat them, then they go to waste. I like a handful of veggies, so I guess maybe she is taking after me.&#60;br /&#62;
I can try and smoothie for her and get up earlier so I have time to make them. Right now I get her up, dressed, and we are out the door,  breakfast and milk cup in hand.&#60;br /&#62;
@Anagram:  I tried butternut squash a couple weeks ago and I did not like it at all!  I could try with a banana, but she hates banana's, ever since she turned 12 M. We do premade pancake batter and it is 50/50 if she will even eat those. &#60;/p&#62;
&#60;p&#62;We waste SO much food every week because she changes her mind on what she won't and will eat.

<description>&#60;p&#62;oh, and I agree finding time to cook is tough.  Those pancakes only take a couple minutes to mix together--I made a double batch this past weekend when DH was out of town and it was just LO and I.  I froze the leftovers in ziplock bags (flat) so they take up very little space.  Our freezer is also really full.&#60;/p&#62;
&#60;p&#62;I'm going to try the veggie smoothie next.  If it tastes like fruit, it could be a good way to get veggies in me (I don't eat enough).

<description>&#60;p&#62;@Smurfette:  I would be discouraged too if I spent time cooking and he didn't eat any of it! It helps motivate me when I know he'll actually enjoy what I make. I am able to make the smoothie very quickly in the mornings. Pete sits in his high chair in the kitchen waiting for it. The spinning blender entertains him. It's my breakfast too, so I make big batch of it and we both drink it together. &#60;/p&#62;
&#60;p&#62;I try to make two batches of muffins (24) and then freeze them individually for the month. &#60;/p&#62;
&#60;p&#62;I haven't made any of the dips myself so I'm not sure how labor intensive they would be. &#60;/p&#62;
&#60;p&#62;Is there a nice grocery store near you? Sometimes I go to our fancy grocery store called The Fresh Market and pick up some pre-made vegetable side dishes for Pete when I am tight on time. This week I bought an orzo salad that has spinach in it and he likes that. &#60;/p&#62;
&#60;p&#62;Alternatively, my pediatrician told me not to stress about picky toddler eating. She said it's a stage that happens to almost every kid! There's only so much you can do.

They aren't orange (just kind of golden colored) and don't taste like squash, do I don't think your LO would detect it. I just buy the frozen squash puree, so it's not really any work for me.&#60;/p&#62;
&#60;p&#62;1 cup whole wheat flour or 1.5 cups all purpose&#60;br /&#62;
1 cup uncooked commercial baby oatmeal cereal from the box&#60;br /&#62;
1 cup milk (I use almond milk)&#60;br /&#62;
1/2 butternut squash puree (or 1 medium banana pureed)&#60;br /&#62;
1 tbsp melted margarine or butter (unsalted type)&#60;br /&#62;
3 eggs&#60;br /&#62;
1-3 tsp baking powder (depending on how thick you want them)&#60;br /&#62;
apple juice (about 1/2 cup) or use water if you prefer&#60;/p&#62;
&#60;p&#62;Add cinnamon, nutmeg, dash of vanilla or other flavorings if you wish.&#60;/p&#62;
&#60;p&#62;Mix all ingredients together and add enough juice/water to make pancake consistency. Cook on your cook top in a frying pan as you would with &#34;regular&#34; pancakes. &#60;/p&#62;
&#60;p&#62;The baby cereal is for added iron.  ;-)

&#60;p&#62;My biggest issue too with her eating is I don't have time on the weekends and week to cook these meals. I do boxed and super simple meals. I don't want to cook all weekend, when that is the only real time I get with her since the week nights are so rushed.
