I also love smittenkitchen.com. She's got a few different fall-ish recipes.

I read a really simple one for pumpkin muffins! Use 1 can of pumpkin puree with 1 box of yellow (or any cake) mix! (no other ingredients) Bake for 15-20 min, VOILA! :)

I don't have recipes on me (which I know makes me not helpful) but I also love apple cake and I would add the suggestion of pumpkin bread. Both can be made with or without nuts.

This is the easiest dessert you will ever make (and they're relatively low fat!) I brought dozens to work last fall and they were gone by lunchtime. My co-workers have already started asking when I'll be bringing them this year!

JUST ate this last night at my Bible study and it was AMAZING. I didn't make it but hope to try soon:

Apple Spice Cake

Ingredients:

1 1/2 cups vegetable oil
3 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
4 eggs
2 ½ cups chopped granny smith apples
1 cup chopped nuts, such as pecans and walnuts (I toast them first but this is optional)
1 teaspoon pure vanilla extract

Nonstick cooking spray with flour

1. Preheat oven to 175°. Spray a cake or bundt pan with cooking spray (I also put a little oil just to make sure it doesn’t stick) ; set aside.

2. Working over a large sheet of parchment paper, sift together flour, cinnamon, baking soda, and salt; gather sifted ingredients into center of sheet; set aside. (I hear this part is optional!)

3. In the bowl of an electric mixer fitted with the paddle attachment, combine vegetable oil, sugar, and eggs; mix on high speed until lemon yellow.

4. Fold reserved parchment in half lengthwise; with mixer on medium speed, gradually shake in dry ingredients until just incorporated.

5. Add apples and, if desired, nuts, to batter; mix to combine. Add vanilla, mixing until incorporated.

6. Pour batter into prepared pan, and bake until a cake tester inserted in the center comes out clean, approximately 60-65 minutes.

7. Remove from oven, and cool slightly on a wire rack.

8. Invert cake onto rack; turn cake right-side up to cool completely on rack, and sprinkle with powdered sugar

My turn for bringing treats to bible study is coming up in a couple weeks and I need help finding something to make! Since it is October I want to bring something that is "fall like" and since it is in the morning I usually bring something sweet and not necessarily healthy lol.... Anyone have any awesome ideas for me? Thanks in advance :)

ETA: I should add that I cannot use any kind of nuts because we have a lot of kids that are allergic to them.
