<description>&#60;p&#62;I am also GF because of an autoimmune response. Mine is Hashis. I have a significant reduction in symptoms, and dont feel like I have to be 100%gluten free. I'll add though, that if I end up in a stressful season and run down I do the AIP doet for a while and it makes a huge difference in my symptoms. It works very well to reduce the inflammation and I recover much faster. &#60;/p&#62;

<description>&#60;p&#62;@hellobeeboston:  Yes! Everything you wrote is point-on.  BEST breads (when I do indulge) are from  Udis and Canyon Bakehouse.  The only pasta my family has been eating has been Barilla's GF.  They barely notice it is GF (as long as I cook it long enough.  :wink: ).&#60;br /&#62;
Going out to eat is SOOOO hard (* I always ask for a GF menu) so I'm glad you covered that as I forget to ... as well as, cross contamination.  We have separate peanut butter, jam, butters, etc. for what I (and my mother in law who has celiac disease) can have versus the rest if the house and guests.

<description>&#60;p&#62;@RonjaL7:  I am! I have celiac disease, was diagnosed about 13 years ago (or so)... compared to then it’s much easier to find GF food now. You should have them test for celiac BEFORE you go GF or it won’t test properly. &#60;/p&#62;
&#60;p&#62;Breads: my favorites are Udis, Canyon Bakehouse and BFree brand. Against the Grain also makes excellent rolls, baguettes and pizza shells. &#60;/p&#62;
&#60;p&#62;Pasta: I don’t love the corn pasta, But haven’t tried it for years. It’s been so long I forget what real pasta tastes like but I just use Barilla’s GF option mostly. &#60;/p&#62;
&#60;p&#62;GF Flour substitutes: Cup4Cup all purpose mix, and the King Arthur GF mix. &#60;/p&#62;
&#60;p&#62;GF Bisquik is delicious! It just comes in a tiny box and is double the price of regular.  :bummed: &#60;/p&#62;
&#60;p&#62;There’s tons of good products out there. I personally do not like the taste of garbanzo/garfava flour, it makes a weird soapy taste and it took me years to figure out. So note that if something tastes “off”.... &#60;/p&#62;
&#60;p&#62;Hidden gluten: soy sauce, chicken/veg stock are my two big ones. Soy sauce tends to be in marinades for meat often. Most soups are out unless you can confirm. Also malt vinegar sneaks into random places too. &#60;/p&#62;
&#60;p&#62;Cross contamination shouldn’t be an issue for you unless you’re planning on being really strict, or if it turns out you to have celiac, but something to watch out for: things fried in the same oil as gluten, bakeries pretty much off limits with all the flour floating around, using the same surfaces/knives etc.

<description>&#60;p&#62;I’ve been GF for almost a year but Celiac runs on my moms side (she and her sisters and my sister have been diagnosed) so I’ve been around GF foods my entire life. I don’t do a lot of substituting, but if I’m baking I always use Bobs Red Mill. We always used lots of whole wheat and other grainy options, so I usually do half Bobs and half buckwheat for things like muffins or pancakes (which I don’t eat much of but my kids do). I use Banza pasta.

<description>&#60;p&#62;My partner and housemate both have celiac. The one thing that's not a repeat of things other folks have already said is not to cut out gluten until after you've had testing. If you go gluten free before testing, celiac won't show up, you won't have a formal diagnosis, and you'll have to restart gluten (and plausibly feel gross) to ever find out for sure.

<description>&#60;p&#62;I am!  I actually have a wheat allergy and have been found to test positive on ANA tests (* I have multiple Autoimmune disorders).  Honestly though, I have read through all of the PPs statements and the ladies have pretty much covered everything I was going to write from the high gyclemic and caloric content of gf bread/pasta substitutes to cooking pasta thoroughly so it doesn't stick or keep &#34;chewy&#34;! 😊  I find it easiest to steer clear of processed foods (on the most part), but honestly, who can give up pizza? 😉

<description>&#60;p&#62;@RonjaL7:  For bread make sure you toast (and butter) it.  That pretty much takes any and all gluten free bread from inedible to pretty good!&#60;/p&#62;
&#60;p&#62;And just an FYI pasta can be tricky.  I've found that all of it tastes really pretty spot on IF you cook it for the right time.  It is super easy to under or over cook it (and the box directions aren't always the most accurate) and it goes down hill fast if that's the case, so sometimes it takes a lot of taste testing/experimenting.

<description>&#60;p&#62;I have celiac disease. I buy Udi's bread at Costco, and Trader Joe's brown rice/quinoa pasta. I make my own flour blend using America's Test Kitchen recipe (their cookbook, How Can it Be Gluten Free, is the only one I use. Our waffle, pancake, and muffin recipes usually come from that). We use our flour blend and the recipe from Test Kitchen to make pizza dough, in a pinch the bob's redmill one isn't bad. &#60;/p&#62;
&#60;p&#62;Glutenburg and Ghostfish  are the only beer companies I have liked so far. I like some dry ciders, and alcoholic ginger beers are often quite good too. &#60;/p&#62;
&#60;p&#62;We use King Arthur's baking mixes for things like brownies and cake.&#60;/p&#62;
&#60;p&#62;I buy BlueDiamond's nuthins- both the regular almond nuthins, and the &#34;artisan&#34; nut thins are quite good.&#60;/p&#62;
&#60;p&#62;More speciality and a local brand (but I think they are distributed nationally now), but Against the Grain makes good bagels and baguettes. They have mozzarella in them which gives them a nice &#34;chew.&#34;&#60;/p&#62;
&#60;p&#62;if you really like baking and have the time- I used to keep a gluten free sourdough starter (you feed it rice flour) and it made excellent bagels, pizza crust, and bread.

The problem is that most replacement products are based on starches/rice/potato which have a high glycemic index so they spike your blood sugar and then crash it. When I finally realized that I started eating paleo style. If you haven’t done a Whole 30 before it might be worth trying out to get a baseline. But to your question- head to Trader Joe’s if you have one- they have a good gf selection.

<description>&#60;p&#62;As an aside, did they test you for celiac?  Celiac is an autoimmune disorder and can cause positive ANA results.  I ask only because I have diagnosed celiac, and what you described for symptoms is pretty much exactly my symptom profile now when I get &#34;glutened&#34;  (though I was much sicker when originally diagnosed).  And, I always get positive ANA results if I'm not super strict with my GF diet. (which I  usually am or I get very sick).&#60;/p&#62;
&#60;p&#62;To answer your actual question, Canyon Bakehouse and Against the Grain are my fave substitute bread products, and Barilla for pasta.

<description>&#60;p&#62;My DH has a gluten intolerance so we eat gf at home. We have tried to reserve gf substitutes as treats since they are usually higher in sugar/carbs (probably to add flavor) than their non-gf counterparts. Both DH and I start to gain wait and feel lethargic when we’re eating a lot of them. So I would suggest looking into low carb and paleo recipes. You obviously don’t have to stick to the other aspects of those “diets” but I find they have the best recipes that don’t use flour/bread/pasta/etc. &#60;/p&#62;
&#60;p&#62;If you’re looking for something specific that you just can’t live without a gf alternative. Or trying to make a favorite recipe let me know and I can make some brand suggestions.

<description>&#60;p&#62;I had a positive ANA test (for some autoimmune disease) 6 months ago, but was negative for Lupus and Arthritis.  So I just had my retest in which they redid the Lupus and Arthritis, but also tested for a thyroid condition.  I was negative for everything except still had the high ANA.&#60;/p&#62;
&#60;p&#62;I read on line that going gluten free can ease some of the symptoms in people with autoimmune diseases.  I meet with the dr to discuss the results on the 15th, but I'm thinking maybe I need to go gluten free to ease the symptoms I'm having (fatigue, pain in fingers and toes, loose stools, dry skin on hands, etc.).  &#60;/p&#62;
&#60;p&#62;If any of you are gluten free can you share some of your favorite recipes or brands of alternatives you like to buy?&#60;/p&#62;
