My mayo is just lemon juice, egg yolks, and oil (I've done avocado, walnut, coconut and olive oils). Lol! Farm fresh eggs from pasture-raised hens don't contaminate like store bought ones. My parents told me (not sure if it's true or not) that washing the eggs and then not using them right away is what makes them susceptible to bacteria like salmonella- so they don't wash them Until they use them.
