DH is Russian, Polish, Welsh, and Irish. Technically LO is all white (as far as I know) but our ancestors came from very different areas. I tell people each one if they ask. When you're 2 ethnicities, people usually say they're half this and that. But will Charlie and Olive just say "Asian"? Is your LO more than 2 ethnicities?
