My son likes rice and ground meat, so we try to incorporate that a lot.

We make turkey meatloaf and cut into small cubes. We serve that with some kind of potato or sweet potato, and DS really likes fries, so sometimes we have it with Trader Joe's sweet potato fries from the freezer section. Peas and carrots or frozen corn or a simple veggie round out the plate.

On the same note, homemade burgers go over well. We just eat the burgers on wheat buns with lots of lettuce and tomato and have it with baked fries or wedges. Beef, turkey, whatever we feel like. I serve DS his burger deconstructed - burger patty and bun cut into pieces, fries, some fruit on the side.

We also make small ground beef meatballs (sometimes we add spinach and cheese to the meatball mix) that he'll eat straight or we'll simmer into Italian wedding soup with spinach and alphabet or star pasta. Or we'll use them for a pasta dish with short pasta shapes. We simmer our soups with lots of baby carrots cut into chunks because he likes soft cooked carrots. Sometimes we throw chickpeas into the soup as well.

We often make fried rice packed with minced leftover veggies, meat, avocado, eggs, etc. For him, we mix in a little mozzarella cheese until its melted to make the mixture sticky and then we roll/wrap the rice in pieces of seaweed/nori and cut into little baby sushi for DS that he can pick up and eat.

DS also likes Japanese curry - its very mild and gravy-like and he likes it since it has chunks of cooked carrot and potato in it and we mix it up with rice and he gobbles it up. You can also add frozen peas or corn for extra veg. We just use the S&B blocks of curry base they sell in the Asian section of the store and dinner cooks up fast.

All meals come with fresh cut fruit on the side and if he still seems hungry or doesn't like his dinner, we offer some yogurt for dessert.

@Mrs. Champagne: I wish DS would like casserole style meals. He prefers his stuff separated. A meat, cut up, a veggie, fruit.

As a kid chicken with broccoli and cheese was a big hit. My parents had this Campbell's Soup recipe book. So the base was condensed broccoli cheese soup and then they would add additional fresh broccoli.

Tacos or nachos can be alot of work with all the veggie chopping, but it's a kid crowd pleaser.

Marinated chicken and veggies tossed with bowtie pasta. It was like a sneak attack of good for you stuff mixed with something fun- bowtie.

Not necessarily a dinner food unless you eat a lot of it, but tuna salad with macaroni noodles was another winner.

My son loves shepards pie. Pasta. chicken pot pie. We eat a lot of meals that are like that.. Not usually a meat with sides. So I think he likes that better.

A loves eggplant Parmesan, baked chicken, almost any type of steamed vegetable if she can dip it in ranch, we make lots of different types of tacos (ground beef, steak, chicken, fish), we do broiled fish with different sauces or rubs (super fast!!), chicken pot pie (I have to call it chicken and dumplings because she swears she doesn't like pot pie), vegetable soup with crusty bread, she's recently really gotten into salads

The Parmesan crusted tilapia that me of the hellobee bloggers posted a while ago is a favorite here, and very quick.
Polenta with fried eggs, tomato sauce, and roasted veggies
I made a casserole with potatoes, sweet potatoes, kale, and sausage last night that went over fairly well with everyone. I can post a pic of the recipe if people want

My kids must be terrible eaters haha, they probably wouldn't even try this stuff....wish there was a way to get them to be open to new things. It's weird they will eat some strange foods like shrimp, but they won't eat things that I think they would be ok with.

Things my husband often makes and freezes for quick meals:

Curry chicken
Turkey chili
Braised lamb or short ribs
Bolognese sauce

Mix any of the above with rice, quinoa, couscous or pasta.

These all taste just as good reheated. Cook a starch and a vegetable or salad, and you have an easy meal mostly from the freezer.

Salmon is her favorite meal! She eats it with grape jelly. For the baby we chop up the salmon and mix into rice.

Meatballs (either with red sauce or bbq sauce). Meatloaf as well.

I am looking to add to our list of go-to meals, we are all getting bored of our current rotation. I like to make meals that are for adults, but kid friendly, if that makes sense. I don't want to eat chicken nuggets and mac n cheese every night, but I also want my girls to eat and not push their plate away at every meal. I'm going to try and browse Pinterest but would love some ideas that have been tested by you guys already!
