Pesto sauce is really easy to make and freezes really well! You could make them a big batch and then they could have it with whatever their favorites pastas are.

Homemade meatballs with no onions might work too!

How nice of you, btw!

Empanadas are great for freezers and are infinitely customizable. I usually cheat on the dough and use store-bought pie crusts, and then you can fill with any kind of filling. I will do ground turkey/tomato, veggie, sometimes with beans, some cheese only, chicken would be good.... Then you cut each crust in 1/4, add about 1/4 cup of the filling, and seal it off. Flash freeze, and then throw in a ziplock. Bake at 375/400 until golden brown, 15-20 minutes.

Pasta Via: It's spaghetti noodles, broccoli, and canned stewed tomatoes with butter or olive oil and garlic.

EDIT: oops..I missed the freezer part! Some pasta sauces don't call for onions, perhaps? Frozen sauce is always great to have on hand.

I am picking my way through pinterest and google, and where ever else I can find dinner meals. Not too bad on finding some, but of course I want to make sure I'm not making crap food for someone else, need to know it'll be yummy!!

A friend's friend just lost a baby and we're going to make some freezer meals for them.

Anyone have any tried and delish freezer meals with the dietary restrictions of no lactose, and no onion?
