&#60;p&#62;It just keeps fermenting... if you like fermented kimchi, then you're in luck as it ripens.  If not, then you probably want to have a separate kimchi fridge!  Storing it in your main fridge will cause it to go bad much faster...

<description>&#60;p&#62;@Meridian:  CO2 gas is created by the fermentation process!  If you open it once before storing it in the fridge, that should help...  however opening it starts the clock on how long before the kimchi goes bad!

<description>&#60;p&#62;Went shopping, baby was fussy so I went to put him to sleep. Left DH with the groceries to put up and he didn't put the kimchi in the fridge. It has been out for 14 hrs or so. Throw away? This was not the type that comes in a plastic tub like the store made it themselves but instead the type that comes in a glass container and is shipped in from somewhere. Thoughts? I know it is fermented and homemade varieties are shelf stable correct? But the brand says 'refrigerate.' I am so mad at him!! That was expensive stuff!
