I make soups, risottos, sauces for pastas, or add it to tomato sauce and spice it up a little for an enchilada sauce!

@AprilFool: make waffles or muffins with it...i would use a sweet potato waffle or muffin recipe.

Or, make a quinoa salad with chunked up butternut squash, black beans, other veggies, dressing.

Yeah, I am going to answer this the same way I answered the one about peas a few days ago! Sprinkle some salt and pepper on it and eat it! :) I love squash. But if you're more sophisticated you can add some chicken stock, cream and spices and then it is a legit soup.

I just eat it as is, or drizzled with a bit of maple syrup or brown sugar. Or I make a salad with cubed squash, crumbled blue cheese, and craisins. Or use it with pasta. I love butternut squash!

I add puréed veggies (squash, parsnips, carrots ect) to my red sauce. It adds nutrition and no one is the wiser :)

Maybe make a risotto with it. If you eat yogurt or oatmeal , add some in with cinnamon. I do that for M and she seems to like it.

What if you add the purée to a sauce or soup? I had a really good gnocchi dish once and the sauce was butternut squash purée.
