@MrsSRS: Oh interesting! I would've never thought of that.

We are going with tacos for tonight. Thanks for all the suggestions!

Oh, and if you have a stand mixer just toss it in there chunked up and it will shred with the paddle attachment. Also works with whole chicken thighs or breasts

Pulled pork sandwiches. Shred the meat, mix in BBQ sauce, throw on a bun. DH also likes to add coleslaw, pickle slices, and Ruffles to his sandwich! Serve with salad or chips or potato salad.

Pork ragu. Shred up the meat, throw in a jar of marinara and a splash of red wine and let it simmer while you boil up pasta (papparadelle or rigatoni would be great!) Add some chili flakes to make it spicy if you want. Add cheese, bread, and a salad.

Bahn mi. Toss the shredded meat with a tiny bit of soy sauce and lime juice, add to French rolls with a grated carrot slaw (just toss some shredded carrots with a little vinegar and sugar) and cilantro. Add Sriracha or jalapeno slices if you like.

I am making a pork roast today in the slow cooker, a balsamic pork roast, and there will be leftovers. Tonight we are having it with sweet potatoes and salad. I wanted to have it again tomorrow but maybe not the same exact way? I'd like to repurpose it. Any suggestions for how I can best repurpose it into a different kind of meal?
