My husbands FAVORITE Christmas treat is Nuts and Bolts, and I've always slow roasted it in the oven, however a few days ago I saw a post on Facebook about baking them in the slow cooker. I gave it a short, and they turned out pretty nicely!

I made chicken broth in the crockpot last night (chopped carrots, onion, and celery) plus a whole cut up chicken and seasonings and it turned out WAY better than any time I've made it stovetop. SO chickeny and rich

@LuLu Mom: bumping this thread because I'm trying your beef stroganoff recipe tomorrow (so excited!) but I wanted to check on the time - standard 8 hours on low? I've never cooked stew meat in the slow cooker so I wasn't sure.

@mrs.shinerbock: not a specific recipe but in general, if you are cooking something a long time avoid sugary sauces like BBQ sauce- the sugar burns (I found this out the hard way). And the more you fill the pot the more leeway you have.

@Apples4Teacher: I have used frozen chicken breasts. Honestly it probably is a small risk that they are at an unsafe temp for too long.... But I've done it a lot and never gotten sick.

@jedeve: Yeah, I currently do a lot of stews and beans, which I only really like to eat when it's cold outside (not very often here in TX.) I don't have one that converts automatically, but it is on my Christmas list.

@mrs.shinerbock: I did a stew the other day. It was sooo good. I forgot the potatoes, so I don't know how they would do in a crockpot. It wasn't a crockpot recipe so I adapted it. Just dredged and browned the meat first then dumped everything in and set it to low. I put in a few cups less broth.

http://thepioneerwoman.com/cooking/2011/01/beef-stew-with-beer-and-paprika/

I bet the bbq ones work well. Anything that had to cook low and slow anyway. Avoid chicken though. That will just dry out.

Do you have a cooker that converts to warm after so many hours? That helps.

@jedeve: I couldn't find the salsa chicken here (I'm on my phone, which makes it so much harder to read!), so maybe it was already suggested, but I make a salsa chicken recipe where I shred the chicken and then serve it in crunchy taco shells with shredded lettuce, cheese, sour cream, etc.

Great idea for a thread! Following

When I was on Weight Watchers, I adapted this baked potato soup from food.com (I copy and pasted my original, so all WW points are still here) It makes lots of leftovers, so I always have them for lunch!

Serving Size: 1 cup (4 points) or 2 cups (8 points)
Yield: 12 1-cup servings or 6 2-cup servings

6 medium golden potatoes, peeled and diced
1 large onion, chopped
1 quart chicken broth (or 1 quart water + 2 extra large bullion cubes)
3 garlic cloves
1/4 cup butter
1 cup fat free half and half
1 cup low fat shredded cheddar cheese

Add the potatoes, onion, chicken broth, garlic cloves and butter to the slow cooker. Cook on high for 4 hours.

After 4 hours, mash the potatoes using a potato masher. Add the half and half and cheese to the potatoes remaining in the slow cooker. Blend with an immersion blender.

Top with any of the following (some will add Weight Watchers points)
scallions (add 0 points)
fat free sour cream (2 Tbsp, add 1 point)
low fat shredded cheddar cheese (2 Tbsp, add 1 point)
a strip of bacon, crumbled (add 1 point)
carmelized onions (add 0 points)

We love crock pot beef stew. Put ingredients in the crock pot in this order and don't stir:

1 lb potatoes, cut in 1 inch slices (don't need to peel)
1 lb baby carrots
1 bag frozen peas or frozen peas with pearl onions
Throw in half a cup of frozen chopped onion if you didn't use the peas with onions
2 lb beef stew meat
1 can condensed cream of mushroom soup
1 can condensed French onion soup

@T.H.O.U.: It was pretty good. Kind sweeter and carrot-y. I've made another version before (non slow cooker) that we really liked from Pioneer Woman, I think. I used mostly chicken broth instead of veggie (I mixed them) when I made it, and I added an extra carrot. There was a ton of it leftover, so I saved some for LO for lunch and I froze two meals worth.

I make salsa chicken but use half a packet of chicken taco seasoning. I make a double batch and then leave half the chicken and the juices in the pot and add chicken broth, veggies or hominy and a small can of enchilada sauce and it's posole or tortilla soup in aMother few hours!

We do Italian beef sandwiches by seasoning a chuck roast and adding half a jar of pepperoni Including the juice and some Italian seasoning until shreddable . We add bell pepper strips in the last hour And serve on crusty rolls.

We make chicken wings in any seasoning we feel like for 4 hours then broil to crisp the skin. Super tender that way and a lot of fat renders off.

We make amazing ribs. Cut a rack of baby backs or spare ribs in half, rub with mustard and then season with BBQ seasoning and stand sideways in the pot for 6 hours or more with half a cup of water or beer. Once tender pull out to cookie sheet, baste with BBQ sauce and broil in a hot oven for a few minutes on each side.

We do a thanksgiving style meal where we season chicken or turkey with poultry seasoning, lay on the bottom, top with prepared stuffing mix with a little less liquid than the box calls for, then top with 2 bags of frozen veggies like corn and green beans and then cook for 4-6 hours. Serve with gravy and cranberry sauce!

DH's favorite is veggie beef soup. It's chunks of chuck roast with carrots, onions, celery, chunks of potato, thyme, bay leaf, salt and pepper, a can each of green beans, peas, and corn (for some reason it has to be canned veggies for the flavor to be right) and beef broth, simmered all day. We like adding a few shots of Franks Red Hot to our bowls and eat with hot sourdough.

You can basically take the same recipe using bigger chunks of chuck, minus the canned veggies and less broth and make stew or pot roast. Sometimes I thicken with cornstarch or roux, sometimes I just add a packet of gravy mix. If I'm making pot roast I also add a little bit of A1 sauce for a little twang, use whole baby carrots and bigger hunks of celery.

Bone in ham in the crockpot comes out super moist and tender. We just rub with brown sugar tinged with clove, add some pineapple juice or orange juice or coke to the bottom and let it go for several hours. The bone can then turn into amazing white bean soup another day.

Crockpot chicken and dumplings. So good! I added carrots and celery. Next time I will add more broth because the dumplings soaked up a lot of the liquid.
